Pete’s Baked Bean Lasagne (2014)

Serves 4

Ingredients

1 Carrot, grated (s) (sff)
1 Onion, finely chopped (s) (sff)
1 Celery stick, finely chopped (s) (sff)
1 Knorr vegetable stockpot
1 Tbsp. Oregano
60g Strong cheddar (2Hea/4=0.5syn per person)
250g E.L. beef mince (ff)
400g Chopped tomatoes (s) (sff)
400g Baked beans (ff)
Lasagne sheets (ff)
Lasagne dish

Method

In a frying pan, sprayed with frylight, cook the onion until soft, add carrot & celery, add mince & cook until the meat has browned, add the tomato, oregano, season well, cook for 20 mins.
In the meantime, get a lasagne dish ready, open the beans & lasagne sheets.
Cover the base of the dish with a layer of the mince, then lasagne sheets, add a layer of beans, then another layer of lasagne sheets & finish with a layer of the mince. Sprinkle the cheese over the mince & cook for 25-30 mins at 180C.

That look delicious if i wasnt using the cheese as a HEX A how many syns would it be?
 
If using it as syns then strong cheddar is 5 syns per 25 g.
Light cheddar is 4 syns per 25 g

Spicy Mexican Tomato & Jalapenos Soup

Serves 4

Ingredients

1 Red Onion, finely sliced (s) (sff)
1 Carrot, finely chopped (s) (sff)
1 Celery stick, finely chopped (s) (sff)
1Tbsp Jalapeno chillies (s) (sff)
2Tbsp Sweetener
400mL Chopped Tomatoes (s) (sff)
500mL veg stock
Handful of fresh basil leaves, ripped
Salt & pepper

Method

In a deep saucepan, sprayed with Fry Light, cook the onion until they are soft, add the celery, carrot & chillies, cook for 10 mins.
Add tomatoes, sweetener, stock & basil, bring to the boil, reduce to a simmer for 10 mins, remove from the heat and using a hand blender, reduce to a smooth soup, return to the heat for a further 10 mins. Can be allowed to cool then reheated.

Have had a really good scout through your recipt list this morning Pete (easier on the PC) and CANNOT wait to try a lot of these out. Definitely wont be stuck for ideas with this list of inspiration - thank you so much for your time and effort in compiling!!
 
Pete’s Baked Bean Curry Loaf (2014)

Serves 4

Ingredients

1 Knorr Curry Flavour pot (2syns/4=0.5 syn per person)
1 Onion, finely chopped (s) (sff)
3 Eggs (ff)
120g packet of Sainsbury’s Indian style curry savoury rice (ff)
400g Chopped tomatoes (s) (sff)
400g Baked beans (ff)
S & P

Method

Cook the rice as per the packet instructions, when cooked drain in a sieve then return the rice to the saucepan, set aside & allow to cool.
Preheat the oven to 180C.
In a frying pan, sprayed with frylight, cook the onion until it’s soft, add the curry flavour pot, mix well, add the tomatoes & beans, remove from the heat & add to the rice, mix the eggs in & season well.
Mix all together & tip into a small loaf tin, lined if not non-stick. Cook for 20-25 mins then insert a skewer, if it comes out clean, it’s cooked, if not cook for a few minutes more.
Tip out of the tin & allow to cool, slice with care as it is crumbly!

Next version of the Chickpea Dahl recipe! Still experimenting with the recipe......

Pete’s Chickpea Dahl (2014)

Serves 4

Ingredients

3 medium size eggs (ff)
120g packet of Sainsbury’s Indian style curry savoury rice (ff)
400g Aldi Chickpea Dahl (ff)
S & P

Method

Cook the rice as per the packet instructions, drain in a sieve then allow to cool.
Pre-heat the oven to 180C.
Mix the rice with the chickpeas & eggs, season well.
Tip the mixture in to a shallow tin tray, lined with greaseproof paper, cook for 25 mins then insert a skewer, if it comes out clean, it’s cooked, if not cook for a few minutes more.
Lift the mix from the tin & allow to cool on a wire rack.

I prefer the taste of the baked bean one if i'm honest, I am going to try making it and allowing the rice to go cold, and the onions, mixing the knorr spice while the rice is still warm, when everything is cold then mix together and use a shallow tray instead if the bread tin!

Hi All, after several requests for my recipes, here they are!
I am not a trained cook, all recipes are homemade and usually experimental! The measurements can be altered as required, I use a fan assisted cooker, lots of herbs, any improvements please tell me.

Pete where are u getting the knorr curry pots? Looked in tescos yesterday down all the isles I could think of and couldn't find it x
 
I bought mine from tesco's, they are with the other spices,our branch has a " new" sticker on it...
Its the branch on the Stratford Rd next to Notcutts by the M42 junction.
