Below is a revised version of my most popular recipe, still the same flavour but now even better by using fresh chicken instead of pre-cooked!

Pete’s Peanut Butter revisited (2014)

(Not suitable for anyone with nut allergies)

Serves 2

Ingredients

1 Onion, finely chopped (s) (sff)
1 Chilli, finely chopped & de-seeded (s) (sff)
1 pack of skinless chicken thighs, cut into chunks (s) (ff)
1Tbs Cumin
1Tbs Coriander
1Tbs Turmeric
1Tbsp. Hot Madras curry
1Tbsp. Tomato puree (s) (sff)
1Tbsp. sweetener
2 Garlic cloves (sff)
2Tbsp. Peanut butter, (smooth or crunchy) (9syns/2=4.5 syns per person)
100g Long grain rice (ff)
200ml Vegetable stock
400g Chopped Tomatoes (s) (sff)
S & P

Method

In a large frying pan, sprayed with frylight, cook the chicken until the meat is white, add the onion, chilli & garlic, cook for 5 mins, add the spices & mix well.
Add the tomatoes, sweetener, stock & tomato puree, mix and season. Add the peanut butter. Bring to the boil, then reduce the heat to a simmer, cook for 20 mins & the sauce has thickened.
In a saucepan cook the rice as per the packet instructions, drain in a calendar, cover & place back on the saucepan & allow to steam, then plate up.

Pete’s Shepherd’s Pie (2013)

Serves 4

Ingredients

1 Carrot, finely grated (s) (sff)
1 Celery stick, finely chopped (s) (sff)
1 Onion, finely chopped (s) (sff)
1 Oxo vegetable stock cube
1 Tbsp. Dried rosemary
1 Tbsp. Worcester sauce
4 Large white potatoes, suitable for mash (ff)
400g Chopped Tomatoes (s) (sff)
400g very lean Lamb mince (<16% fat=8 syn/4=2 syns per person)
Small tub of Fat free Fromage Frais (ff)
S & P
* Optional extra
120g strong cheddar cheese (120/4=30g = 1Hea per person)

Method

Pre-heat the oven to 180C.
Peel the potatoes, cook for 20 mins until soft, mash with Fromage Frais instead of butter or milk. Whip to a smooth mix; keep warm until the meat is cooked.
Brown the lamb mince until all fat has been cooked out, add onions, carrot, celery, cook until the ingredients are soft.
Add the tomatoes, rosemary, Worcester sauce, S & P & stock cube, cook for 10 mins.
Prepare an oven-proof casserole dish, add the meat to just below the last 10mm, add the mash, *add cheese if you want to. Cook for 25-35 mins until the topping has browned & is hot, serve with baked beans or veg.

Pete’s Cottage Pie (2013)

Serves 4

Ingredients

1 Onion (s) (sff)
1 Carrot (s) (sff)
1 Celery Stick (s) (sff)
1 Knorr Dark beef Stockpot
1 Tbsp. dried parsley
1 Tbsp. Tomato Puree (s) (sff)
2 Garlic cloves (sff)
3 Large Potatoes (ff)
250g Extra lean Beef Mince (ff)
400g Chopped Tomatoes (s) (sff)
500g Passata (s) (sff)
S & P

Method

Cook the mince in a frying pan until it’s browned, add the stockpot & allow to melt, mix well.
Add the onion, garlic, carrot & celery, all chopped finely, cook until soft, add the tomatoes & passata, sprinkle with the parsley, bring to the boil then turn down to a simmer, add the tomato puree, mix well & cover.
Simmer for 20 mins, remove lid & season.
Pre-heat the oven to 180C.
In the meantime peel the potatoes, boil for 20 mins then mash to a smooth consistency.
Place the meat in an ovenproof dish, cover with a layer of mash & cook in a hot oven for 10 mins to brown the top. (You can add cheese as a topping if you like)

Very firm favourite in our house this one, we had it last night and even my 8 year old daughter eats it. I also slice in a couple of red peppers and add 1 tsp chinese 5 spice - beyond yummy!!
 
defo tryin a few of these recipes, i like how u included pics so we could see how nice they could be :)
 
Petes red pepper curry for tea this evening...ive not tried it with the chicken yet but Yummmm!! It tastes amazing already. Roll on tea time!!!!!

Hi Pete, i'm new to SW, new to minimins and i've just came across this forum last night and have already read through it all! You're unbelievable!! :) such great recipes that I cant wait to try. You look fantastic by the way :) just want to say thank you so much for all your time and effort!!

Pete’s Pumpkin Seed Cheesecake (2014)

Serves 2

Ingredients

2 Tsp Gelatine
3 Tbsp. Fromage Frais (ff)
3 Tbsp. Sweetener
6 Ryvita Pumpkin seed & oat crisp bread (2 Heb/2= 1Heb per person)
150cm/6 “ cake tin
165g Mullerlight yogurt, strawberry flavour (ff)
Strawberries (ss) (sff)
Boiling water

Method

Pre-heat the oven to 180C.
In a large bowl, break the crisp bread into small pieces; add boiling water, mix a bit at a time until you have a smooth mix.
Using a cake tin, press the mixture into the base, smooth over with the back of a spoon.
Cook for 10 mins only, remove & allow to cool.
In a clean bowl, mix together the yogurt, fromage frais & sweetener.
In a small bowl filled with 2 Tbsp. boiling water, add the gelatine & mix until all granules have dissolved, add to the yogurt mixture, mix together then tip over the base mix, place in the fridge for a few hrs. Until it has set, remove & add the strawberries for decoration.
