Original Curries on Red Days

I love Extra Easy but lose most on red days. I also love curries but have always had them with rice and naan bread. Now I can give up the naan but I don't know what to have instead of rice on red days. Any suggestions on what I can have?

Put diced butternut squash into your curry, it adds some "bulk" to it and makes it a bit more filling. BNS is my best friend on red days, it's my potato substitute!
 
The other thing to do is make a nice side dish or two to have with your curry, like a spinach dish or a cauli dish. I have a SW curry book at home which has things like that in. I bet there's some recipes on the website.
 
How about making cauli 'rice'? You bung a fresh cauli in a food processor with the grating blade in (or just chop it up really small) then fry it (either in a HB tbsn of o/oil or fry light) for a few mins, adding herbs in if you like ..... it looks like rice and after its been 'fried' it really doesn't taste like cauli, it takes on the taste of whatever you put with it.

Honestly, I know it sounds bizarre but try it, it works.

On a red day I serve up curry and rice to the family, and have mine with a HE jacket potato (227g!).
 
i too have a jacket potato heb choice only because like yourself i dont know what else to have on a red day or you could always have rice but do it on a green day curry made from veg or small portion chicken as a b thats what i do if i realy want rice x
 
I have curries on green days as I also love vegetarian curries. One of my favourite recipes is the Sweet Potato and Spinach curry. That is so lovely with rice. Next week I shall have a chicken curry with butternut squash on a red day. I'll just have to do some rice separately for my son. He won't eat anything that's too veggie.
