Lunchtime green ideas pls?

Ok, so I've been getting to grip over the past weeks with introducing green to my diet but I'm running out of ideas for my lunch at work. I've been using cous cous snack pots and the likes, but feel that everything is so processed whereas when I was doing red I was eating alot of fresh stuff for my lunch accompanying my meat!

So has anyone got any tasty ideas for a desk lunch? Preferably cold ideas, cos I do prefer a cold lunch :D:D
 
How bout some cooked cold pasta with sweetcorn and grated cheese from your allowance, with maybe some tomato puree mixed in so it's not to dry? I can imagine it's a nightmare to plan! Can't think of anything else at the mo, but I shall be back if I get a flash of green inspiration. I love all the processed stuff on green days, I live off low fat supernoodles with pickled onions chucked in :D
 
As the weather is getting warmer I've been having more salads, love feta cheese salad, also salad with v. low fat cottage cheese, or with sliced cold new potatoes in it, sometimes i mix a bit of pasta in with salad too. Occasionally have ryvita with cottage cheese or philadelphia light and tomatoes or cucumber. i tend not to have bread.
I'm sure others will have more exciting ideas so i look forward to hearing them too:)
 
Have you tried the SW pasta quiche - is lovely. Mix a batchelors pasta sauce (a free one) make it up with milk and cook it as per instructions. Then mix into it an egg and a small pot of cottage cheese. At this point i also add some peppers and onion and cook it in the oven for about 30 minutes in a flan or lasagne dish. When its cold it turns out nicely like a quiche and cuts up brilliantly and is great as a snack or with a big salad on a green day and its all free.

I love eggs so often have an egg salad with 4 ryvits as a HEB.

Jacket potatos are good if you have a micro but you said you like a cold lunch so forget that!

Quorn sausages cold the next day are lovely with a big salad.

You could cook up some rice (either the fre batchelors ones or plain rice) and mix peppers, sweetcorn, peas, onion, spices etc and serve it with chopped tomatoes, cucmber, and celery.

saying that i follow EE so always have a salad and either meat, fish or eggs
 
Hi all, thanks for the ideas :) The thing is I'm going to try and have past, rice or potatoes in every meal when on green cos I think thats why the weights coming off speedily at mo (as in I've not been enough and living on superfre foods when on green) which my consultant has said I need to slow down.

So any ideas are more than welcome :) And the reason for cold foods is that I would in no way want to put food in our microwave at work!! It's black due to some else AND I AM NOT TOUCHING IT! LOL
 
I must be the only person that doen't like mug shots lol.

I think I'll just have to start preparing fresh pasta salads and so on. I'm bored of the processed stuff all of the time, although shall keep them as emergencies! :):)
 
How about a spanish omelette sliced up cold? Or you can cook rice, frylight onions and peppers, add frozen peas, beat a couple of eggs then mix it up and cook in a loaf pan. Slice that up. Pasta salad. Potato salad, mix in chickpeas or beans.Frozen fresh soya beans are good too. Cottage cheese is nice mixed with mashed hard boiled egg and hellmans extra light mayo.

just a thought( as i have been reading the books ) lol, can you not give mix to max ago some days then maybe have a red lunch and green breakfast and dinner may not be such a struggle then. i like the sound of mix to max myself

pasta and pesto? my fav with the red pesto- only 2.5 syns per tablespoon which did more than enough for me!

The thing with mix to max is, from what I understand it's designed to boost your loss and I'm strangely enough (never thought I'd say this!! :sigh:) trying to slow mine down. I think when I get closer to target though if I struggle then I may give mix to max a go as I like the sound of it too :D:D

This is what I've arranged for lunch tomorrow....Pasta with pesto, cherry toms and spinach :D Looks nice.

I also bought some plain couscous today but not really sure what to do with it. Need to add some flavour so may just experiment with it over the week...hopefully with tasty results :jelous: lol

Re plain couscous
I made some for class last week and it went down well - I just copied the Jamie Oliver Advert: Couscous, lemon zest, lemon juice and sliced and slightly charred courgettes.
It went down a treat, I've since made it for my friend who loved it too.
You can serve either warm or at room temp. Much nicer and fresher than the ready mixed couscous packs :)
 
Do you have facilities to heat stuff up at work?

You could pre-cook some sausages, quorn or normal & take a couple of eggs into work & make yourself scrambled eggs & sausages on toast.
 
The black bean salad in the recipe section is lovely I would recommend that. You can always alter it to your liking. I had a nice green leaf salad with cold potatoes, sweetcorn and kidney beans last week that was delicious and no dressing (I never thought I would eat cold beans that weren't from Heinz and covered in tom sauce).

Lemon and coriander is free, wild mushroom in 1/2 syn, and the mediteranian is 1/2 syn. i love the mediteranian one with loads peppers, courgets, onions and a little chilli and garlic yummy :)
