Roasted Veg Quiche Recipe Please?

I was told about a roasted veg quiche last night at class which sounded lovely but I can't remember the recipe - does anyone do this?

I don't do a roasted veg quiche but I do a veg quiche, I stir fry peppers, mushrooms, onion & anything else which takes my fancy & is free on either day then I mix it with a big tub of cottage cheese & 4 eggs, bung it in a dish & cook in the oven for 30 mins

that sounds really nice. What is cooked cottage cheese like? Does it melt????

You cant taste the cott cheese - I make these and they are LUSH!

I always mix the cottage cheese and eggs with a hand blender to make quiche.

Right, I am definitely going to try this this week, if my kids don't use all the eggs before i get to them (baking cakes!!they are the cake queens and i can't eat them!).
