Green Day Vegetable curry

Hi guys,

Does anyone have a tried and tested recipe for vegetable curry? I'm trying to impress my Mum with something lovely for tea but also show her that it can be 'SW style'.

I've already got;
3 sweet potatoes
2 peppers
Bag of baby spinach
Mushrooms
Onions
Everyday cupboard bits + a few spices.

Any recipes would be very much appreciated!

Do you have the new SW magazine?

If so there is a chicken curry receipe in it which I made last week, subsituting the chicken with tofu to make it veggie. It was really tasty, and hot!You could use quorn too.

Sorry but I've lent the mag to my mum so can't post receipe at the moment.

Infact, that evening I ended up making the curry using 2 tbsp of Balti curry paste and then synned every portion as 2 syns. It was looovely.
