Green Day Onion and Potato Tortilla

I have just made this from the latest magazine. I must say it's lovely and filling and also free on Green and EE!
I have eaten half for my dinner along with mushy peas :drool:
If anyone wants me to post the recipe, let me know.

Sorry it's taken me so long - I haven't been on the PC since Friday. Anyhoo - here is the recipe:

Ingredients
3 Onions
3 Medium Sized Potatoes
2 Garlic Cloves
6 Eggs
a handful of fresh parsley
Fry Light
Salt & Freshly Ground Black Pepper

1. Peel and roughly chop the onions. Peel and cut the potatoes into 1/2" / 1cm cubes. Peel and finely chop the garlic. Beat the eggs. Finely chop the parsley.

2. Spray a non stick frying pan with fry light. Add the onions and potatoes and cook over a medium heat for 12 - 15 minutes or until softened, stirring often. Add the garlic and mix well

3. Mix the parsley with the eggs and season. Pour into the pan, tilting the pan so the egg is spread evenly. Cook gently for 8 - 10 minutes or until the tortilla is set at the bottom.

4. Place the pan under a medium - hot grill. Cook for 5 minutes until the top is golden. Allow to cool slightly. Cut into wedges.

:drool: it is yummy and done me for a dinner and a lunch :) xx
 
I think Im going to make this for lunch. It was going to be a SW quiche but I fancy this now with lots of mushrooms...yum and ty
 
I tried this as well but wasn't particularly impressed to be honest. I found that the potatoes were'nt properly cooked so if I was making it again I would either par boil them or use a tin of baby new potatoes.
 
Circes - I make this often for lunch, but I microwave the potatoes first (like a jacket potato).

I cook the onions for about 5 mins, then add the sliced (already cooked) potato - sometimes it 'crisps up' a bit ... also I add a handful of peas at the adding parsley stage :D
 
I was about to come and start a thread about this as the one I have just made tastes amazing, but the potatoes are still a little on the crunchy side! lol.

Next time I will use new pots and do them in the microwave I reckon, also extra fibre in the skins will be good too.

Still looking forward to it on my picnic lunch to the easter egg hunt tomorrow! :)
 
Totally agree that the potatoes need cooking first, got myself all ready for a good feast and was crunching my way through it. never mind will do better next time!!
