Kale Soup

Finding inspiration
I have adapted this from the 'You Are What You Eat' cookbook, and I've posted it to help with those who are having a bit of problem with, um... their digestive transit :eek:. This is really good for you and helps to get you moving. Apparently also good for helping to curb sweet cravings...

Fry Light (or tbsp olive oil if you're happy to syn it)
1 large onion, peeled and sliced
1 garlic clove, peeled and crushed
2 turnips, trimmed, peeled and chopped
750ml stock (made with vecon, or chicken bovril)
2 courgettes, trimmed and sliced into 1cm pieces
200g curly kale, rinsed and drained
1 handful freshly chopped dill

1. Heat the frylight in a large saucepan and gently cook the onion and garlic over a low to moderate heat 4-5 mis, stirring continuously to make sure it doesn't brown. Add turnips and cook for another 3 minutes.

2. Add the hot stock, bring to the boil, lower the heat and simmer for 10 minutes.

3. Add the courgettes and kale and simmer for a further 10 minutes or until the kale is cooked.

4. Allow to cool then blend in a food processor or with a hand held blender until smooth.

5. Serve garnished with dill.

It will be the greenest bowl of soup you'll ever eat... but it really does do the trick. :)
