Casserole ideas anyone?

Sausage casseroles I make slightly differently to something like chicken, for example. For a sausage casserole I make a smooth tomato sauce (onions, tomatoes, basil, pepper, mixed spice, balsamic vinegar, blitz it) and then put a few raw sausages in a dish, pour the sauce over the top and bake until the sausages go crispy on top and lovely and soft on the bottom.
OR, I guess you could make it as you would a chicken casserole. Heat up a frying pan, put onions in there with the sausages, and let the sausages cook a tiny bit, and then transfer it to the casserole dish, pour over tomatoes, season with pepper (no salt needed, the sausages are salty) and basil/majoram,add diced carrots and mushrooms, and then bake in the oven for up to an hour, depending on your oven.

I made a 'spicy sausage' type of casserole the other day which was really nice..

I browned the sausages off in a griddle pan, whilst in another pan browned off some onion with some garlic and mushrooms, added some extra lean bacon chopped into small pieces. To that I added a carton of passata, added the sausages (which I had cut into chunks) and then added some lazy chilli and some smoked paprika to taste and cooked it off for around 20 mins.. we really enjoyed it, although I do realise it may not suit all tastes !

Last night I made Lancashire hot-pot to celebrate the EE days!
Cook about 800g of de-fatted lamb chops in fry light, same again for about 4 lambs kidneys (optional) same for a large onion. Put meat, onions and 1/2 pint syn free stock in an oven proof dish, and top with 4 thinly sliced baking potatoes. Cook with a lid on at 200 degrees for about 90 minutes, take the lid off and cook for further 30 minutes.
Serve with pickled red cabbage and the whole lot is free!
