What to have for lunch on a red day?

Hi
Just started sW and am having my first red day tommorow....am going out tommorow and gona throw together a chicken and bacon omelette.... hmmm cant wait.

my problem is not sure what to have for lunch? i thought them stagg chillis were free... err no... just checked.

it seems i will prob have to have a blooming salad!!

is there anything ready made that i can have that i can by from the supermarket. not got many ideas from the mag it just talks about extra easy or tea time recipes.

Salad is one of my favourite things on a red day, actually. Start with standard salad vegetables, and add chopped sweet peppers and spring onions, baby corn (the Green Giant canned stuff is lovely when drained and rinsed), chopped hard boiled eggs and any meat of your choosing - have a look at the syn values of some of the prepacked flavoured chicken and that sort of thing, some of them really aren't very much at all - 1.5 syns for a whole packet and that kind of thing.

Then add some fat free french or italian dressing - if you use italian and have chicken and bacon as your meat, chuck a tablespoon of parmesan over it for 1.5 syns. Fabulous. :D
 
My fave thing to munch on is prawns - stick them in a pan with a spray of fry light.
Then add in some chilli powder, a splash of soy sauce and some chunky salt. Mmmm!

Or, sometimes I have ryvita (can have 4 origianl ones as a healthy extra) topped with lashing of low fat cottage cheese and some red onion and smoked salmon. Delish!
 
My dinners on a red day tend to be quiche, chicken, salad. Or I like to make up a beanfeast and eat that with a jacket potato as a HEB.
 
A beanfeast, wouldn't that be extra syns on a red day? You can always go for a sandwich or a roll by using a healthy b, the same applies with a jacket potato. Then just add lots of your favourite salad items and any meat or fish from ham to prawns, bacon to tuna, chicken to beef, it's all good. Plus you can have boiled eggs and cheese as a healthy a.

Oooh I had a lovely homemade burger for lunch the other day. It's sooo easy, just mix together some extra lean mince, diced red onion, salt and black pepper, squeeze together and shape into a burger shape then fry in a little frylight for several minutes on each side. It's best to fry instead of grill as they can be a little delicate and don't hold their shape so well under the grill. I then topped the burger with 28g of cheddar for a healthy a and a couple of slices of bacon with the fat trimmed off, it was gorgeous! I just served it with some mixed leaves, onion, cucumber and grated carrot but you could have any salad or veg you want (no peas, sweetcor or parsnips though!!).
 
I always struggle on a red day for lunch. I always seem to end up with left overs.....bolognaise, chix curry, fish stew which I eat with a couple of slices of bread (HEXb).

Tuna nicoise (spelling!) salad is nice. Loads of tuna, couple of boiled eggs quartered, cooked french beans, nice salad leaves, olives (syns) and a fat free dressing.
 
Just looked through the food directory....not really any "ready meals" that are free on red....there are some for minimal syns though:

Asda frozen cottage pie 4 pk - 4.5 syn each
asda chilled good for you beef casserole with dumplings 400g - 5.5 syns
asda chilled good for you hot smoked salmon linguine 400g - 3 syns
sainsbury chilled basics salmon cottage pie 300g - 2 syn
tesco chilled healthy eating/choice moroccan chix couc cous 350g - 2.5 syns
tesco chilled healthy living/choice cod and salmon lasagne 400g - 3.5 syns

I reccommend this book...you should be able to get it from your group, I bought mine on Ebay....it has the majority of branded foods from large manufacturers and all the supermarkets.
 
I do eat a load of salads on a red day - I mainly have red days too! But then I love salad so its not a problem for me!
Today I am having salmon in a salad and topped with 2 tbsp Hellmanns extra light mayo at 1.5 syns, cant go wrong!
I also have Green Giant Country Vegetable Soup (in pouch), that counts as a HeB, or I have bacon and boiled eggs on 2 slices WW brown bread toasted and topped with 2 tbsp Asda Smartprice tomato sauce - 1syn.
Last night I had a lamb casserole in a pouch that was advertised in last month's magazine (cant remember the make off the top of my head), it was really nice and I can see myself heating one of those up for work again - it was 1.5 syns too.

We do this too - I use a griddle pan to cook them on and it works beautifully :)

I also discovered that Tesco's Healthy Choices (or whatever the hell they call it now) cheese singles are the grand total of 2 syns each, so we put the burgers in a wholemeal roll (Hex B), layer the burger and bacon with 2 cheese singles (4 syns) and add a tablespoon of ketchup (1 syn) - utterly fabulous burger for the grand total of 5 syns. You can almost forget you're on a diet with one of those! :D

You should have heard the noises my husband made when I told him that the Extra Easy plan meant we could have syn free chips with it as well. :happy036:
 
i love for my lunch on a red day.......mixed leaves with chopped celery, big prawns, banana........and sweet chilli sauce..and grapes...its very fillin.........
