I've been a mad scientist in the kitchen....and this is what I made...

Yes. You can.
I have been missing baked goods. But I do not want to use oils, eggs, white flour, etc. so I created this cake, and its gorgeous!! SO if you fancy something low fat and low carb, here you go! Don't be put off by Tofu - it makes it incredibly moist and lush!

First, you will need to make some applesauce. I just peeled, chunked and simmered some tired apples in a little water with some SPlenda BRown sugar, a little vanilla and mixed spice. THen mashed to a coarse sauce.


So - heres the cake:

Spice Apple Cake

1/3 cup mix of raisins, sultanas and cranberries
300g Silken Tofu (soft, dessert style)
1 cup applesauce
1/4 cup Splenda, white
1/4 cup, semi-packed Splenda Brown Sugar
1.5 cups WHeat Flour
1 tsp Baking Soda
1/2 tsp salt
1/2 tsp each(or to taste) nutmeg, mixed spice, allspice and cloves
1/2 cup oats
1/4 mixed seeds (sunflower, pumpkin, linseed, etc.)
1/4 cup chocolate chips (optional)

Put raisins in a bowl and cover with boiling water. Set aside.

Combine dry ingredients, except the oats, and set aside.

In food processor, blend tofu on high until creamy and smooth. Add apple sauce and pulse to combine.

Add sugars and mix together.

Add dry ingredients and mix. If batter is too thick, add a splash of orange juice, or more applesauce.

Mix by pulsing to combine all ingredients, but do not over mix.

Stir in oats, drained raisin mixture, seeds and chocolate chips.

Pour into cake tins, or glass dish(es) and bake at 170c for 25-30 minutes. Cool.
