Chick pea curry

[FONT=Arial, Helvetica, sans-serif]Chick Pea Curry[/FONT] - Serves 4[FONT=Arial, Helvetica, sans-serif][SIZE=-1]You can use whatever tinned beans you fancy in this dish.
Korma Curry powder will make a mild curry while Madras will make a hotter one.

[FONT=Arial, Helvetica, sans-serif][SIZE=-1]30 ml vegetable oil
1 small onion
2 cloves garlic, crushed
3 tbsp curry powder
450g carrots, peeled and sliced
225g mushrooms, quartered
1 small cauliflower, broken into florets
2 tbsp tomato puree
275g chopped, tinned tomatoes
1 vegetable stock cube dissolved in 600ml boiling water
225g tinned chick pea, drained and rinsed
salt and pepper

[FONT=Arial, Helvetica, sans-serif][SIZE=-1]1. Heat the oil in a large pan and gently fry the onion for 2 minutes. Add the garlic and curry powder, stir and leave to cook gently for 2 minutes.[/SIZE][/FONT] [FONT=Arial, Helvetica, sans-serif][SIZE=-1]2. Add the carrots, mushrooms and cauliflower florets and gently fry for a few minutes.[/SIZE][/FONT] [FONT=Arial, Helvetica, sans-serif][SIZE=-1]3. Add the tomato puree, tinned tomatoes and stock, then bring to the boil.

4. Leave to simmer gently for 20 minutes, then stir in the chick peas.

5. Season to taste and serve with boiled rice or a jacket potato

Sounds yummy but have you tried Asda tinned chick pea curry, it is free food on green and a fav of mine on a baked potato and a side salad. plus it is oh so fast to get ready when your really hungry.
 
It was tasty-ish - though pehaps next time I would put a couple of potatoes cut up small in just to make it thicker as the curry sauce was a little thin for my liking. I think I would also add spinach for the last 5 mins or so of cooking for an extra flavour.

re: Asda Chick Pea Curry. I will be buying that tonight. Free you say? That's amazing.Do Asda's do a free range of sausages like Morrisons do (for red days)?

I really love curries, chillies and stir frys with a kick. X
 
OOOOH - Fatty no More!!

If you love chick peas, chickpeas are great if you roast them for about 40mins. Dip them in what ever spice you like or just season with salt and pepper and they become almost like a savoury snack, such as bombay mix or nuts. x

Just drain the ones from a tin. It's best if they have a little moisture as the spices will stick a little better.
