Does anyone have any recipes for nice soups , i find soup great for lunch times but im running out of ideas:sigh:
 
I have just made a lovely soup from

1 butternut squash
3 small(ish) sweet potatos
2 large(ish) carrots
1 red pepper
1 onion
1 tsp ground cumin
1 tsp ground corriander
1 tsp smoked paprika
salt & black pepper

Chopped them all up bunged the onions and spices in a pan for a few mins then bunged in the veg added about 2 litres of veg stock (vecon)boiled till the veggies were soft, mushed with the spud masher for a while then got the stick blender on them
I know i made it myself but have to say it tastes lovely

Oh and have made it without the sweet potatos to make it free on red and its still lovely
 
Hope you dont mind but I have just copied your recipe and am peeling veg as I type this. Just trying to spice up my lunch time! Sounds delicious xx
 
No i dont mind :) Its lovely my big bro came round before had a taste whilst it was cooling and stole a huge tub of it to take home, had made enough for my lunches at work next week but he has stolen half of it ! so will have to make some tomato and red pepper tomorrow when i get in from work
 
That's something my brother would do too! He is round for tea tonight. Just had sausage hash and now I fear he might steel my soup too!

Sweet potato and garlic soup

I made this today from a soup book i have. Its only good if you like garlic though. Its good for your skin too.

1lb sweet potatos
2 bulbs of garlic
1litre of veg stock.
salt and pepper

cut the end off the garlic bulbs but dont peel, wrap them in foil and bake for about 20mins.
meanwhile cube and boil the spuds til soft and then blend til smooth.
once the garlic is cooked and cool enough to touch squeeze the pulp into the potato mixture and stir until it boils.
 
Leek and potato for a green day

4 leeks
4 large potatoes
2 pints of stock made with 1 vegetable oxo cube (1 syn)
salt and pepper to taste

Basically boil it all up in a pan until it's soft and then blitz it.

for a red day, you could make leek and swede soup the same way.

carrot and corriander is really nice too.

Hi there i love butternut squash, red pepper and chilli soup - you can make it as hot as you like but its always nice for a change.
1 butternut squash
3 sweet red peppers
1 green chilli
 
Soup is a life saver (well diet saver) a lunchtimes if you're at work, this week I've been alternating with 'leek & potato' and 'tomato & lentil' both free on green.

Leek & Potato
1 lb leeks
1lb potatoes
half a large onion
2-3 cloves garlic
1 pint vegetable stock (veg Oxo)
Frylite


Tomato & Lentil
4oz red lentils
2 tins chopped tomatoes
half a large onion
2-3 cloves garlic
1 tsp mixed herbs or oregano
1 pt veg stock (veg Oxo)
Frylite

For either recipe
Fry off the chopped onion and garlic in the fry lite, add the other ingredients, bring to the boil then simmer for about 20-30 minutes (I usually leave it on for 20 minutes then just switch the ring off and leave it to 'mature' till I'm ready to deal with blending it!)
Whiz in the blender then share between four freezer-proof dishes.
Or of course you could share it with your family if you're feeling generous!
 
Yum yum yum yum lol i just made the butternut squash and carrot soup at the beginning of the thread and oh my god it is delish :) have made a huge batch of it and have had some for my dinner amd might even have some later tonight hey its free why not xx
 
Try this, its lovely

ingredients

2 tablespoons sunflower oil
900 ml (1 and a half pints ) of chicken stock add more if required
1 onion finely chopped
1 cooked chicken breast chopped
4 garlic cloves, chopped
3 tablespoons of chopped fresh coriander
100 g (4 oz ) Basmati rice
salt and black pepper
4 carrots, sliced thinly
6 large mushrooms



1) heat the oil in a pan and fry the onions and mushrooms until softened

2) add the garlic and fry for 1 minute

3) add the rice, carrots, and stock, season to taste and bring to the boil

4) cover and simmer for 10 minutes stir in the cooked chicken and coriander and heat through serve hot

I just made this minus the sweet potatoes (i am on a red day) and it is lush!!! i looove it, and so good for u! thank you:)

Chicken and veg soup

Serves 4

2 chicken fillets cut into very small pieces
3 leeks
6 carrots - cubed
chicken stock (syns) much as you like depending on if you like lots of liquid
3 chopped garlic cloves
chopped red chilli (optional)
dried chilli flakes

soften in frylite the leeks, carrots and garlic (and chillis if using). Add chicken and stock and simmer until carrots soft and chicken cooked through (oh, and salt and pepper it!)

The chillis and chilli flakes are optional but this give the soup a lovely warming kick.

Also, chuck in a bit of fresh coriander at the end if you want.
 
Just made this today, really simple, incredibly healthy and filling and cheap and yummy:

1 cup yellow split peas
1 large onion
1 yellow pepper
2 Knorr stock cubes
200ml semi-skimmed milk
1 heaped tsp turmeric


Soak the peas overnight in plenty of cold water. Rinse, place in pot with 3pts cold water. Bring to the boil, turn heat down and simmer for 1 hour.

Add chopped onion and diced pepper to pot, add stock cubes. Cook on a fast boil for 25 minutes or until veg is cooked and liquid reduced. Turn down the heat, add turmeric and milk, stir through and keep on a gentle heat for a few minutes, until milk has thickened a bit. Devour. :D

The turmeric makes all the difference, really gives it a lovely taste/colour.

All free on a green day, except your milk which is a HEXA, and the stock cubes which are 1.5 syns each.
