Finding inspiration
After a few days of being, shall we say, relaxed in my eating :rolleyes:, it's been hard to readjust my head back to SW eating. So today, having finally gotten rid of every last morsel of naughty crimbo food to friends, I had a look in the new SW magazine and decided I must make something out of there so I can eat today and not feel bad about it.

I intend to try that week of Extra Easy when I get to the grocery store, but in the meantime, I've made the Spiced Lentil Soup which is really yummy and quite filling. I had a bowl earlier and it's left me feeling quite satisfied and my Christmas "munchies" seem to be dying down. Phew!

So, my advice if you're struggling to get back on track, make yourself a pot of soup and have a big bowl of that and leave some handy for if you want a snack later. It's easy, filling and very tasty. It's worked for me!;)

Soup is an excellent choice when on a diet.

Because it's mixed with water, it fills you up quicker and stays in the stomach for longer.

If you had a drink either side of solid food, the liquid just passes straight through the stomach.

Its on page 23, spiced carrot and lentil soup.
Dry fry cumin seeds and chilli flakes in a large pan.Add chopped carrots,potatoes,onions,and split red lentils with some stock made with vecon. Bring to the boil, and simmer for 15-20 mins. Leave to cool slightly and whizz in a blender until smooth.

Just having another bowl of the spiced carrot and lentil soup for my lunch. This really is a tasty soup! I added a pinch of turmeric during cooking just to give it a subtle flavour boost and more colour. I also had some leftover basmati rice from another dish so I chucked a bit into my soup today to give it a little more texture (as the soup was blitzed) and it's really nice... Mmmm!
 
I made another batch of the Carrot & Lentil soup again today, but this time, I cut the potatoes and carrots into small cubes, similar to how they'd be if you bought a bag of frozen mixed veg, and just cooked it like that, but without blitzing it at the end, and personally, I think it's better this way. It's a nice satisfying texture and very filling :)
