I ate my willpower!
I though that I would start up my own thread with just red day recipes to try and help those who fancy a red day but are not sure what to have, so instead of posting loads of individual recipes, I will post them all on this thread.

I will take pics of each dish as and when I cook them!

To start off we have:-

Slow Cooked Creole Chicken Stew

4 skinless, boneless chicken breast fillets
salt and pepper to taste
Cajun seasoning to taste
1 (400g) tin chopped tomatoes
1 stalk celery, diced
1 green pepper, diced
3 cloves garlic, minced
1 onion, diced
100g (4 oz) mushrooms, sliced
1 fresh green chilli, seeded and chopped

  1. Place chicken breasts in slow cooker. Season with salt, pepper and Cajun seasoning to taste. Stir in tomatoes, celery, green pepper, garlic, onion, mushrooms and green chilli.
  2. If you have a slow cooker, cook on Low for 10 to 12 hours, or on High for 5 to 6 hours, alterntively, cook at 180 degrees for approx 1.5 hrs.
Serves 4 and Syn free on Red
 
Garlic and Rosemary Chicken

Ideal for Sunday lunch. Serve with loads of veggies and HEXB of new potatoes.

Serves 2. Free on Red


2 skinless, boneless chicken breast fillets
2 cloves garlic, chopped
1 tablespoon dried rosemary
1 tablespoon lemon juice
salt and freshly ground black pepper to taste

  1. Preheat oven to 190 C / Gas mark 5.
  2. Cover the chicken breasts with garlic, then sprinkle with rosemary, lemon juice and salt and pepper to taste. Place in a baking dish and bake in preheated oven for 25 minutes, or until juices run clear (baking time will depend on the thickness of your chicken breasts).
 
Marmite Chicken

Very quick and easy! Ideal if you like marmite! Serve with salad/jacket spuds/new potatoes/veggies

2 teaspoons Marmite
4 skinless, boneless chicken breast fillets

  1. Preheat oven to 180 C / Gas mark 4.
  2. Cut 3 slits lengthwise halfway into each chicken breast. Place 1/2 teaspoon of Marmite into each slit.
  3. Bake in the preheated oven for 30 minutes, or until the chicken is cooked through and juices run clear.
Serves 4. Free on Red!
 
My fav!!

Chicken stuffed with laughing cow & chives wrapped in bacon. In oven for about 40 mins.

Yum. I do a similar one with chicken covered in BBQ Spread and Bake, then bacon and then cheese. Bake in the oven for about 20 mins. Lovely!

I think all the recipes we can get the better. I know that a lot of slimmers have people over for dinner and are not sure what to cook. Hopefully this will give them some ideas!

Better than a Kebab House Chicken Kebabs

2 chicken breasts cut into chunks
2 tbsp L.F.N Yogurt
2 tsp Chilli flakes
2 tbsp cajun seasoning
2 tbsp lemon juice (I use jiffi)
1 tsp salt

Mix all the ingredients together and marinate for as long as possible, at least a minimum of 2 hrs.

Then cook on a griddle pan, grill, george or even oven bake. Serve with salad, shredded cabbage, cucumber etc and some low fat mayo!

Free on red
 
Steak and Mushroom Pie

4.5 syns per serving on original (opps)
Serves 4

1 med onion, sliced
1 level tbsp cornflour
2 bay leaves
salt and pepper
284ml/1/2pt stock made from beef bovril
227g/8oz closed cup mushrooms
3 x 28g/1oz sheets filo pastry
1 med egg, beaten

Place the onion in a pan. Toss the steak in the cornflour and add it to the pan with the bay leaves and seasoning. Add the stock and about 142ml/1/4pt of water to just cover the beef. Bring to the boil, cover and simmer for 1.5hrs until the beef is tender. Cool and then discard the bay leaves.

Preheat the oven to 220 degrees/Gas 7. Quater the mushrooms and place in a 2 pint dish. Add the beef mixture using a slotted spoon, and pour over about 198ml/7floz of the cooking liquid to come halfway up the dish. The meat will come to the top but once the mushrooms cook down, the level will sink.

Brush each sheet of pastry with egg, lightly scrunch up and place on top of the meat, pulling the sheets out to make sure all of the meat is covered. Brush generously with the beaten egg and bake for 20 mins. Lower the heat to 180 degrees/Gas 4 and continue to cook for a further 20 mins.

You can also make this is 4 indivdual pie dishes.

Lamb (or chicken) Rogan Josh

500g chicken or lamb diced. ( i used lamb shoulder)
2 small or 1 large onion
1 red pepper
1 tin tomatoes
passata/tomato puree
1 stock cube or chicken bovril
1/2 teaspoon whole coriander seeds
1/2 teaspoon whole cumin
1teaspoon hot curry powder
1-2 tablespoon fresh coriander
squeeze of lemon juice


Slice the onion, deseed and chop the peppers.

Spray some frylight on a pan and cook the onions til soft, add the spices and cook for a couple of minutes and the pepper and cook until soft.

Add the meat and brown. Make up the stock with boiling water to about 1/2 pint or a bit more so it covers the meat and bring to the boil.

Add the tomatoes, tablespoon of purée and mix together and turn down to simmer for about 25-30 minutes until sauce thickened and meat tender.If you have any fresh tomatoes around that need using up you can add them too, take the skins off when they get soft.

Add a handful of coriander leaving some back for garnish and cook for about 5 mins.

Serve with the remainder of coriander on top with a squeeze of lemon.

Serves 2 (generously)if on a red day and no rice and 4 if having rice and using the meat as an HEB.

Syns about 1.5 for the whole thing 0.5 if using the bovril. __________________

omg i love marmite would neva in a million yrs fink to do this recipe but 100% definitely gonna try it now!

Bacon wrapped Mushrooms

Free on Red
Serves 1

4 slices bacon (fat removed)
4 large flat mushrooms (stalks removed)

Preheat oven to 200 C / Gas mark 6.

Wrap each mushroom with a strip of bacon, and secure with a cocktail stick. Arrange the mushrooms on a medium baking tray.

Bake approximately 15 minutes in preheated oven, until the bacon is evenly cooked. Serve hot.
 
Bacon, egg and little gem salad

110g (4 oz) bacon all visible fat removed
2 eggs
2 heads little gem lettuce
1 carrot, grated
1 tomato, sliced
salt and freshly ground black pepper to taste

Grill or place bacon in a large, deep frying pan. Cook over medium high heat until evenly brown. Remove, dice and set aside.

Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and slice.

Place lettuce in a salad bowl along with the carrot and tomato. Add bacon, eggs, salt and pepper and toss. Add some extra light mayo or low syn dressing.
