i dont really cook much... on a sunday roast is yummy, anyone ever worked out how many cals in one of them?

Missed the questions as I've been tearing my hair out all week on a school trip :wave_cry:

I am definitely back to my compulsive minimins habit now though!!

One of my fave foods is fish and also seafoody types of things, I like a big varied salad with low fat thousand island dressing with it too....

Recipe wise....I'm a bit of a guesser and tend to throw things I like together without a plan

Stir frys- Chicken or prawns with mushrooms, cabbage, beansprouts, carrot, onion, baby corn, sugar snap peas fried in spray oil. Packed with veg & protein.
Home-made broccoli/cauliflower soup- saute a finely chopped onion in veg stock, add chopped veg (caul or broc) and simmer until tender (not too soft or all the goodness will be gone!). Blend the whole lot, add a little semi/skimmed milk, black pepper & mixed herbs & simmer for another 15mins. Packed with goodness & at least 2 of your '5-a-day'!
Mushroom omelette- spray fry loads of chopped mushrooms & a little chopped onion, add 2 beaten eggs & black pepper and cook. Finish under the grill with a little low-fat cheese if you like.
Cheesy Veg- take all the veg thats about to go off from your cupboard- chop it into similar sized pieces & steam/boil until tender. Add 1/2 packet of cheese sauce (made with water) and stir through the veg. Add black pepper to taste.
Instead of tuna & mayo- use tuna & l/fat cottage cheese- very little taste difference but better for you. Great in baked potatoes or on toast for a snack.
I'll try & think of some more...

Home made soup - any veg of your choice, add a couple of potatoes and onions cover in veg stock bring to boil simmer till cooked then blend till smooth, I often add spices or chilli flakes to liven it up a bit.

Very low cal and filling also freezable in single portions (I freeze mine in sandwich bags).

I can't live without a weekly roast. I have the full monty with gravy but then I always have a very light dinner (like a boiled egg and toast). It's all about balance isn't it!
