Hi everyone I was wondering if anyone has ideas for a slow cooker when ive been work all day sometimes the last thing i feel like doing is a meal where as if i can prepare it all in the morning and put it in a slow cooker it will be ready for when i come home Thanks xx
 
Creole Chicken

  • 8 chicken thighs
  • 125g gammon, cut into one inch cubes
  • 125g Morrisons extra lean sausages, cut into cubes (the syn free ones or use other low fat sausages and count syns)
  • 1 can chopped tomatoes
  • 1 green pepper, chopped
  • 6 green onions, chopped
  • 6 fl oz tomato passata
  • 1 teaspoon salt
  • 2 dashes hot pepper sauce
Put everything into the slow cooker, set on low and leave for 6 hours. Serve with wholemeal pasta (HEX B) and roasted vegetables.

 
You can stick a whole joint or a whole chicken in too. I'm going to cook my chicken that way as it just falls off the bone, handy for nibbling on chicken during the day.

Any ideas what you could do for a green day in a slow cooker? I am veggie but would love to dump it all in first thing and then have lovely syn free meal all ready for us after the babies have gone to bed!! Although the smell of food cooking all day would probably get the better of me!!!
 
When I am pushed for time, I make a load of freezable meals at the weekend and then take them out during the week when I need them. I have recently made a quorn shepherds pie (my own recipe) if anyone wants it, let me know. It was lovely and better than a normal one!!

Ok, here goes:-

1 packet of frozen quorn mince
1 can baby carrotts
1 can sliced mushrooms
1 onion, chopped
1/2 pint stock made from beef bovril
1tsp tom puree
few dashes of wocestershire sauce
tbsp Bisto gravy granules
4 potatoes
5 laughing cow lights (optional)

Method

Peel potatoes, chop and boil. Once boiled, mash them with the laughing cows for really creamy mash or leave without if you like.


Spray frying pan or wok with frylight. Fry the onions until soft. Add the mince until soft and thawed. The add the carrotts and mushrooms. Cook for 5 mins.

The add the w/s, tom puree, gravy granules and enough stock to get it to the conisistency you like (some like loads of gravy, I like mine dryish!). Cook for about 10 mins. Season with salt and pepper.

Once cooked, add the mince mixture into an oven dish and then top with the mash. Bake in an oven at 180 degrees for about 1/2 hr or until mash has browned.

Serves 4 comfortably and works out at about 1/2 syn each on green.

I usually split into 4 portions. Eat 1 and freeze the rest.
 
Try putting a tin of baked beans in the mix .. and red and yellow peppers, green beans sweetcorn. I also have some garlic and chilli that you grind I add that too.. Tip for quorn or soya mince.. allow time for it to soak in all the flavours.. so make the night before or in the morning. Add swede to the mash mix too .. yummy!!!

That sounds lovely. I like a bit of variation!
 
I used my slow cooker yesteday to make a basic stew. I put in a oacket of lean cubed beef, chopped onion, chopped carrot, salt and pepper. Poured in water to cover about 2/3rd of beef then sprinkle in an oxo beef cube. It was ready about 7-8 hours later and was lovely.

Snap, i did exactly the same, its even nicer today:)
