Cooking for others whle on LT

I'm only on day 11 but am actively trying to pre-change cooking and eating habits by already cooking the way I feel I should after I have reached my goal for DH and DD.

I am really conscious of putting a nourishing, healthier and better-portioned meal on the table for them in the evening.
Have started using a little cup to measure off the rice, couscous, mash, whatever. It also looks really nice when you tip it over onto the plate (like a little sand-castle). Also, making sure there's at least one healthy green plus a nice salad and some lean meat cooked with as little possible oil/butter. And making a little 'painting' on the plate. Making it look delicious and healthy.

DD (3 years old) is delighted to help with the preparation, arranging her asparagus or other veggies into a face on her plate. We made "tomatoe-rice boats" yeasterday (plum tomatoes stuffed with brown rice and herbs, baked in the oven) which looked so pretty.

And I seem to get almost as much enjoyment out of it as DH and DH. Preparing the food with love and a good dose of fun is actually such a big part of dinner-time, that actually eating it is perhaps only a part of the whole meal 'event'.

I also read about The Great Big Vegetable Challenge a few weeks ago and found it SO inspiring! For anyone who is intereste, check out THE GREAT BIG VEGETABLE CHALLENGE.

Any thoughts, tips, ideas on cooking for others in preparation for cooking for ourselves in the future would be really appreciated!
