I thought those of us who are just trying to eat healthily and cut out the junk might be able to post recipes or hints to help cut out the fat and calories but that still taste good and fit into family life.

My family loves tuna mayo as i do but the thought of all that fat in mayo doesnt do me much good but i didnt want to give up what i enjoy with my jacket potato so i started to mix in half low fat mayo and a small pot of low fat natural yoghurt nobody noticed the difference and i felt like it was a small step to cutting down the mayo

Ohh...good thread! I cook a load of veg (carrots, courgettes, mushrooms, onions etc.) & blend them roughly, then make a spaghetti bolognese using half the meat I'd normally use. The veg bulks it out and no-one noticed either- they even complimented me on it! LOL! They almost get their '5-a-day' in one meal!

Here's what I had for lunch today (divided by 4 obviously :D)

4 chicken breasts
Salad dressing (I used honey and mustard this time around
225g pasta
1 red onion
225g mozzarella cheese shredded
1 head of romaine lettuce chopped
6 chopped cherry toms

Grill chicken until juices run clear. Cool and cut into strips
Cook pasta according to directions (my way...not DHs way...he cooks it until it doesn't resemble pasta :D)

Rinse pasta in cool water.

Mix pasta, chicken and everything else together.

Was tasty :)

That sounds good for me as on SW very low fat natural yog is free so it will save me the syns of mayo (as nice as it is)

For dinner we are having homemade pizza using a tortilla wrap for the base.

Spread with red pesto and tomato puree. Add anything else I can find that needs eating up.

LOL! Beat the credit crunch at the same time!!

That's the way to do it :D

But it seems there is a change of plan for dinner. Family have decided they want sweet pizza. So it will be cream cheese and mango (pineapple cream cheese) pizza, still with the tortilla base.

So what's for dinner? No idea and just about to start work.

Thinking cap on time.

im making homemade beefburgers today, using lean mince, peppers onions breadcrumbs and bit of tomato paste and maybe some herbs see what takes my fancy

I suppose it's possibly a bit easier for me as far as meals go as I'm vegan so they tend to be lower fat than vegetarian or meat based meals. Though considering that it could be beneficial perhaps to use things such as texturised vegetable protein instead of red meat in things like spaghetti bolognaise, chilli etc as it's much lower in fat and cals. Also if making curry using coconut or soya milk instead of cream and using chickpeas and veg over chicken or lamb.

kazzyh4 there are many recipes for different types of veggie burgers on this site. Fatfree Vegan Recipes if you just type in 'burger' in the search engine about 50 different things come up!

cheers mixxi much appreciated
