Red Day Dinner Suggestions?

Hi all, I'm having a friend over for dinner and want to have a red day. It doesn't have to be anything posh but just looking for some new ideas of what to make.

What are some of your fave red day dinners? (oh, should mention he's not big on fish/seafood or beef so that prob just leaves lamb, pork, turkey or chicken!)

Chicken stuffed with cheddar (1A) wrapped in bacon, served with green beans, carrotts and a jacket potato.

Chicken (or any meat) stirfry

we had stuffed chicken breasts last night, I do mine with philadelphia and garlic in the middle though then wrapped in bacon :D with mashed swede and stir fried vegetables :D

I only do a red day about once a month so not really got any more suggestions as that's what we have every time:D
 
Gammon, Fried egg, Mushrooms, Potato (used as HEb) made into Wedges, Grilled Tomato for something quick and easy.
 
i dont know how you would describe it but last night this is what i did for tea,

fried some onions and mushrooms in fry light with some drie chillies and spices and chucked in some small chunks of chicken and beef (but you could do it with whatever) then poured over some beef bovril, took it off the heat and stirred in a little bit of yogurt to make it nice and creamy
 
Moussaka - I love it made with lamb mince. I think there is a recipe on the SW website. You make it almost as normal but drain off any fat from the mince. For the top you mix one tub of 0% Total Greek yoghurt with quark and an egg.
