Veggie Side Dish Suggstions please - red day

Well, I basically always have the same things on Red days veggie wise and I'm looking to shake things up a bit so please share your faves!

I tend to have:

  • steamed green beans with seasoned salt
  • steamed asparagus with Flora Extra Lt
  • broc/cauli mashed with lots of black pepper and 'A' choice of Laughing Cow Light.
  • Mashed butternut squash
Am bored now! Roasted veg is ok but I prefer it mixed with loads of pasta instead of just on its own.

How about ratatouille - homemade of course! I dry fry some onion and leek until soft - add red/green pepper, courgette (any veg you fancy really) then add tinned tomotoes and worcester sauce.
 
here's one for you - they're dead easy to make

stuffed mushrooms

sins = free on both days(if using cheese as h.extra)
serves = 1


ingrediants
2 pack of large mushrooms
half a leek
half a small onion
3 light laughin cow triangles*
small pinch of low fat cheese*


*count as one healthy extra 'a' choice


1. turn oven on, remove stalks from mushrooms and lay on a baking tray open side up.
2. finely chop the leek and blanch in pan of boiling water for a few minutes.
3. finely chop the onion and mushroom stalks and fry in frylight until softened.
4. drain the leeks and add to the onion.
5. add the 3 cheese traingles and stir over a low heat so the cheese melts.
6. fill the mushrooms with the mixture and put in the oven for around 10 minutes.
7. top the mushrooms with the grated cheese and leave a few more minutes for the cheese to melt.


they're VERY tasty - you can have it with anything as it's free on both days. they would probably be lovely with a steak!

you could also have
- garlic mushrooms
- cheesy leeks
- stir fry

I luuuurve roasted baby leeks.

I spray them with fry light. Put them in the oven on a high temp for about 20 mins.

While they are cooking get some ham or if your a veggie some cooked lasagna sheets and spread one side of them with a laughing cow cheese triangle.

After 20 mins take each baby leek and roll the ham or lasagna sheet round it then place back on the baking tray season a little and grate a little cheese over place back in the oven for five mins then hey presto yummy yum yum.:D

lol it better be a chunky peanut one as i don't like the other ones!

made the mushrooms tonight with a red and white onion and cheese....they were lovely too!
