Why oh why does bottled water have a use by date when its apparently been flowing through springs for thousands of years???

When water is moving it doesn't go stagnant something to do with dilution effect and reoxygenation due to turbulance I think. Bottled water can go stagnant because of the bacteria etc in it. Plus I think the plastic in the bottle can degrade and leach out into the water eventually, and it can have damaging effects on your health.
