Rhubarb Rhubarb Rhubarb

Never really liked rhubarb, but as I've made the decision to try everything low-carb on my RTM lists, I thought I'd give it a go. I know it can be very sour, so I found a recipe to make some.

I made it last night and whilst it was still warm I put some Greek Yog on top.

PUREST HEAVEN!!!!

It was STUNNING!!!!!!

Recipe:

250g Rhubarb cut into chunks
5tsps Splenda
1 vanilla pod or drops of vanilla essence)

Gas Mark 6 - heat the oven up.
Cut rhubarb into chunks, put in dish/baking tray and sprinkle sweetener over the top. Add a few drops of vanilla OR split open vanilla pod and leave on top of sugar.

Wrap securely in tin foil so there's no escape!!

Leave in oven for 20 mins, then take out and leave to stand (wrapped) for 10 more mins.

Take off the foil (watch out for the steam.....learnt that one the HARD way!) and add Greek Yog!

ENJOY!

Oh, sounds lovely.
I quite like rhubarb but thought it would be sour. Fancied giving it a go but just looked on tesco online and they haven't got any rhubarb. Where did you get yours?

Have you tried the ginger poached peaches with greek yog. That is lovely too. It is on the website under week 6, but I couldn't see why it wasn't a week 4 recipe.
Was thinking of doing stewed apple with greek yog too, sure that would be nice.
Also the pears poached in red wine which is a week 5. (I started week 5 today).
Making mushroom soup (with added greek yog of course, I am totally addicted).

I got my rhubarb from Tesco - just typed in Rhubarb and it came up with the fresh sticks in a pack (didn't go for tinned). Not sour at all.....bloomin' lovely!

there isn't any or in asda
I will have a look in my local store, they are usually better stocked.

I just added some to my online Tesco order - and there is £1 off it this week - from £2.99 to £1.99 - maybe it depends on your store location!

After have no joy with the rhubarb, I found a punnet of plums that nobody seemed to want to eat so I stewed them and had them with . . . .

. . . you guessed it, Greek Yoghurt.
Delicious!

Recipe

6 plums halved and stoned
150ml water
150ml orange juice
3 teaspoons of sweetener
cinnamon stick
1 teaspoon of lemon juice

Bring to boil and simmer for about 40 minutes until the plums are very soft.
Serve with low fat greek yoghurt

Makes 3 servings.

LOVELY!

I had my gateau again this morning and I'got got rhubarb coming later so I can have it for tea tonight!

Can we have TOO MUCH Greek Yog? I'm having 300g a day. My daily cal count is still only about 600-700 and I'm making sure I have my protein meal with veg/salad too.

I'm hoping to cut it down as the weeks progress and I'm allowed more things to eat - but at the moment I'm enjoying it SO much. No fat and only 4g carbs, 52 cals per 100g too - surely its a good thing?

That doesn't sound a lot of calories - it's much less than I thought it was. I'm finding myself avoiding the yoghurt as I'm so scared of gaining weight. I know it's irrational but I can't help myself. Is there a good cal counting website that you use Deb, or is it a book? Or do you just estimate based on what you know? Input at this point would be appreciated!

I just look at the package. I buy the Total 0% Fat Greek Yog which is 52 cals, 0g fat and 4g carbs per 100g. I am carb-counting really as I plan to stay on a low-carb lifestyle for the rest of my life, so I look at carb-counters on the internet for 'general' things. Other than that, the nutritional info is on the packet or on Tesco product information when you book on line.

Tesco.com have a tracker where you can select the products and amounts you have in a day and it works out the cals, carbs, fat, protein etc and tells you what 0% of your RDA is included. This is great! Takes time to put everything in the first time, but after that you can just select from your usual breakfasts etc. Handy for guidance for the future!

I totally forgot about this, I registered ages ago.
I am doing about 700-800 cals per day, on week 5 and having 2 protein meals per day.
scrambled egg and mushrooms for brekkie today, lovely, and pretty filling too, I was quite suprised about that.

Wow - that's good - just goes to show that we're slowly increasing our cals - very reassuring. I'm looking forward to having 2 meals in Week 5 - especially as we're still on two packs! Don't know how I'll fit it all in my tummy!

Fitting it in can be a problem I have to say.
After that breakfast I can't imagine needing any lunch, but soups are in this week so I have some homemade mushroom soup which I can have for a late lunch.
I have struggled some days to have all my packs, LLC said it would be ok if I got to the end of the day and missed one if I really couldn't face it.
I don't want to do that too often though as we aren't really eating properly yet.

Hmmm.... I'm doing ok at the moment, and to be honest, could happily stay on one meal and two packs a day for ever! However, from next week I'll have:

Breakfast - BF Gateau (LL version)
Break - Muffin
Lunch - Egg Salad and S/F Jelly with Greek Yog
Tea - A nice protein and veg meal (like the curry/ratatouille etc)

Seems like LOADS!!!

Forgot to say....glad you got your rhubarb! I'm cooking mine up tonight to have after my teat - going to try the ginger thing - can't wait!!!

Hi ladies!

I had a chuckle when I saw the title of this thread.

My best friend back home took a film studies course in University years ago, and they told her that whenever there is a group scene shot in the film, which lots of background noise and all the extra's are to look like they are having conversations, they all keep saying "Rhubarb Rhubarb Rhubard" over and over! lol

Don't know if its true but it might be? Anyway.

Sounds like you are both getting on and doing brill in RTM. Well done!!

Hi BL -

Yep - lived with a bunch of film students in Uni and that always stuck with me - use it when I'm teaching drama now!

Loving RTM and think its fabulous! Can't wait till you join us!

apparently it is true, they do get extras to say that!

Deb, I have a question about the tracker.
How do you add your packs in? Can you add items yourself or can you just pick from the list?
I am just adding a mental note to add the cals to my total at the moment.
