Mushrooms on AAM/790 - STBG Can you Help?

Feeling inspired by STBG's phenomenal success WELL DONE YOU YAY!! (and more than a little brassed off with myself - If I'd stuck at this since I started last March, I've have been at goal by now grrrr), I've decided to go 790 because SS just isn't working for me. :eek:

Now, I'm a bit of a funny bugger when it comes to food. I'm veggie, not a problem, and I'm a bit 'green' so I only eat vegetables that are in season and hence, are from Britain and not flown halfway across the world, resulting in silly carbon footprints! This makes it a bit more difficult for me in finding foods I can eat. So I'm settling for Quorn sausages with mushrooms. YUM!

But, when they say 2 tablespoons, do they mean cooked or uncooked. Because Mushrooms shrink A LOT when cooked and 2 tablespoons of raw mushrooms looks very sad once they are cooked!!

OK, yes, I admit it - I'm just looking for a reason to EAT MORE FOOD!! :p

Mushrooms contain next to no carbs at all. Very little calories either.

I usually have six large mushrooms as one portion, sliced and cooked in the microwave or dry-fried

BTW it is THREE tablespoons of veg on 790!

10oz of Quorn is a LOT of Quorn!! I usually have it in two portions! I cook my Quorn in Marigold Bouillon stock in the microwave.

For the chicken Quorn fillets I bake them in the oven as I like the texture once they are cooked.

Do the stuffed mushrooms too - stuff the mushrooms with cottage cheese mixed with some herbs of your choice and bake in the oven. I usually do half the cottage cheese allowance with half the Quorn Fillet allowance and have them together!

I thoroughly enjoy 790 and hope you do too!


 
Also for veg I usually have broccoli, cauliflower or asparagus.

Sometimes cabbage. Mushrooms often.

Pickled cabbage - for its crunchiness - or iceberg lettuce with stuffed mushrooms


 
Don't forget that you can have 150g of fat-free plain yoghurt in place of the milk allowance.

I add CD water flavouring to this - just a small amount - to make a fruity yoghurt!

Or I cook with the yoghurt and make a sauce for the Quorn


 
STBG - I am officially your greatest fan! Thanks soooooooooooo much. Those recipes sound fantastic.

I must stock up on Quorn mince - I feel a shopping trip coming on!

Quorn everything - I buy Quorn pieces - chicken/beef, Quorn fillets, Quorn roast and Quorn mince!!

I had never eaten Quorn prior to CD!!


 
Forgot to add - you can use half a sachet of soup shake to make a sauce too!


 
Oooooh - I'm going to like this 790 lark! I made a Quorn & mushroom curry last night and it was GORGEOUS!!

In case anyone fancies trying my receipe, I used 1/4 teaspoon each of Tumeric, Garam Masala, Cumin and ground coriander, and a little less of chilli powder to give it some fire. I mixed this with a little lo-carb, Lo-salt vegetable stock to make a thin curry sauce to cook the quorn and mushrroms in. When cooked, I drained the liquid from the quorn and mushrooms and added a dollop of fat-free yoghurt to make a thicker curry sauce. Pour it over the quorn and mushrooms and serve with a few spinach and watercress leaves - DELICIOUS!!! It was so good I would eat it off diet too.

If you don't like spicy, you can leave out the chilli powder and you'll just have the lovely curry flavour without any heat at all.

I'm looking forward to trying STBG's stuffed mushrooms tonight too!
