I am finding other peoples diaries really useful to help plan my meals so thought I would start my own one. I am going to put what I am eating - mainly for dinners - and how I made it.

My aim is for easy to make, minimal effort and (hopefully) maximum taste!Don't expect anything gourmet but just a few ideas that you might like to try if you are bored of the same old thing!

It would be really useful for me to get ideas from anyone else too so please feel free to post your recipes so that I can try them out.

Ok so I will start with what I had last night, which was salmon.

I used one salmon fillet and topped it with 1/2 hexa of light philly. This is plenty for me - I didn't feel like I needed any more topping but you can add more if you want to use the whole hexa. Then all I did was pop it onto a baking tray and baked it for 10-15 minutes.

I had it with cabbage and roasted green pepper and courgette. I roasted these in a drizzle of olive oil (2 syns) and a tbsp of thai red curry paste that I had left over (1 syn).

The whole meal was 1/2 hexa and 3 syns. (Plenty left for a dime bar and a cuppa in the evening!!!!)

On Saturday I made some pizzas which were really quite nice.

For the base I used 2 WM Pitta bread (hexb x2), spread a little tomato purée over them. Top with hexa of light cheese, ham, caramelised onions, wilted spinach, tomato and mozzarella (hexa). You can top with anything you like within syns but this was lovely.

To caramelise the onions all I did was use a drizzle of olive and a knob of butter (4 syns), chop the onion so it's relatively long pieces - I chopped the root and tip off, peeled it, chopped it in half, then chopped lengthways and separated the pieces and left it like that. then just cook it really slowly making sure you stir it often. I added a dash of water from time to time to stop it drying out - about 3 times. After about 15 mins I sprinkled a pinch of salt and a pinch of sugar (1 syn). Just keep stirring until its dark brown.

To wilt the spinach i literally just washed it and stuck it in a pan over a medium heat and kept stirring it. It hardly needs any water at all so just rinse it, shake it dry and stick it in the pan.

They were so delish - will be having these again for sure! (2 hexb, 2 hexa, 5 syns)

So tonight's dinner was super easy and quite light since I had a salmon fillet with salad for lunch - I also used one of my hexb as cereal bars and some syns on edamame beans and walkers sun bites (yum yum)

I made roasted tomato, onion and basil soup. All I did was roast the tomatoes and onion in fry light with some garlic chopped up. I left it for at least half an hour and then blended it with my hand blender til it was smooth. Chucked in some fresh basil and blitzed again.

I had it with hexb ryvita with hexa Philly on then and it made it lovely and creamy.

Having some of the soup for lunch tomorrow with scan bran.

Ferrero rocher - 1 syn per ball

I also made some little chocolate balls similar to this tonight - the syn values forum has lots of recipes for using scan bran. I substituted nutella for standard chocolate spread as I have a nut allergy. I rolled them in choc options as recommended and they are a little bit dry but actually quite yummy. next time I will
Leave out the options and hopefully they will be a little more moist. I'm DEFO having them again!!

Here is tonight's offering. Turkey steaks cut thinly and fried off in frylight with aubergine, mushroom and red pepper. Then I put in some Thai red curry paste - about a tablespoon and 2 hexa of Philly. Then mixed it all together in the pan and had it with cabbage and courgette

It was really good actually - more so than expected. Nice ratio of spice to mildness with the Philly

Right, today was a bit of a toughy as I am trying to use up stocks I have in the freezer and cupboards.

I ended up using some pork medallions and sticking them in the oven with chopped up apple. Then I made some roasties in frylight and cooked up some veg (courgette, aubergine and cabbage). I had already used up my hex's so I synned the potato along with the gravy.

Total syns = 6.

Here is my yummy dinner :)

I baked the salmon fillet in a tin foil parcel with some Thai flavoured spices. Cabbage cooked as standard :)

For the other veg I simply chopped up tomatoes, aubergine, courgette and red pepper and just stuck it in the oven in a drizzle of olive oil (2 syns) It's really tasty and look at all that super free

My curly wurly cake :) - 5 syns per slice

Here's how I made it....blitz up 4 scan bran in a food processor. Add a little water to soften (5 tablespoons ish). Add 2 beaten eggs, 5 tablespoons of sweetener and a sachet of Belgian choc options. Mix well and add a chopped up curly wurly. Mix and put in a Tupperware tub. Microwave for 5 mins and tadaaaaa!!!!

I tried it topped with choc Philly but prefer without!

Hello :) I'm here lurking a bit more this week as me and my bf are away this week in Bournemouth. So I have no recipes to give you this week but I am trying hard to not go too mad - despite all the ice cream parlours!!!

Feeling a bit bunged up from white carbs so far but otherwise having a lovely time Mooching around and walking along the beach :)

Hello. It's been lovely :) nice and sunny although we are heading home today and it's a bit overcast this morning. Gonna get the bf up in a bit to head to the beach for a walk anyway.

The only bad bit has been that I have been ravaged by mozzies and my legs are all swollen and painful. Stupid bleeding things!!

Hoping u haven't done too much damage but I think I'm def in for a gain as we have been drinking a lot and I usually don't drunk much. But I will take it on the chin and get it back off if I have!!

Recipes will start again next week once I'm back at work!! :)

Right.....back on it today. Tonights dinner will be a prawn stir fry.....nice and healthy! I am going to use;

Tiger prawns
Red and green pepper
Baby sweetcorn
Sugar snaps
Spring onions
Soy Sauce
Chilli

Literally all chopped up and stuck in a wok with soy sauce - just pop the prawns in near the end so they dont overcook! Couldn't be easier!!
