easy cook/fast meals

Hello,

I am going to give SW a go again but this time I have convinced my husband to do it with me (on the agreement that he doesn't have to think about it and I tell him what he has to eat etc.)

I work full time, have a little boy and a husband who works late. We need really easy to make meals, things that only have a few ingredients (except of course adding all the vegetables). Can anyone suggest anything that they eat that is easy or even ready made that is good on SW?

One thing I have which is really yummy and very quick to make is Mushy Pea Curry - not sure if you have heard of it before. It sounds dreadful, but if you can see past that and give it a try, I'm sure you'll really enjoy it!

I make my curry by frying off chicken breast pieces and onions. Simply add to the pan one tin of chopped tomatoes, one tin of mushy peas, and curry powder to taste. Stir, and let the curry bubble. A few minutes before serving, I stir in a MullerLight coconut yogurt, to give it a real 'korma' taste :drool:

You could add other vegetables such as mushrooms, peppers, etc, but I find the onions, tomatoes and mushy peas quite sufficient. I usually serve my curry with rice or SW chips and vegetables. Actually, I think I'll have this after weigh in tonight, as it's so quick and tasty :)
 
Myself & hubby both work full time, leaving at 7am & not getting home till 7.30ish. We batch cook at the weekends now. Chilli, bolognese, chicken curry, mediteranean chicken to name a few.
 
I work full time too as does hubbie and we have two children and it is a bit of a juggling act. What we do is cook the night before and reheat it the next day.eg last night I boiled some potatoes, peas and cooked some smoked haddock so tonight when i get in I will bung into microwave. For tomorrow its spag bol and I'll cook that tonight. On Sundays I do a roast and cook enough Veg & potatoes for two days.
 
have you got a slow cooker??.. these are great for making up gorgeous teas without doing any work!!..
stick everything in it the night before ..keep in the fridge and then just take it out in the morning and switch on .. you have a nice hearty tea at the end of the day..
i dont even cook any of the stuff first either (unless its somthing like frozen chicken ) it all just goes in..
 
We do stir fry (beef, prawns, chicken) with a blue dragon sauce and either noodles or rice (and the stir fry veg of course)

We do large meals like chilli, spag bol or chicken/ beef curry so one meal takes a while to prepare, but the day after is a lot quicker. Sometimes we maybe make 3 portions, have one and freeze 2.

Other things are chicken breast, salmon fillet or steak served with veg and potatoes (normally dry roasted). Or we sometimes treat ourselves to breaded fish and syn in (served with skinny chips and peas). :)

Oh and to be super quick we just do the skinny chips as wedges - no peeling potatoes!
