Beef Lasagne

Just had the Beef Lasagne from the Extra Easy cookbook and it was gorgeous so i thought i'd share the recipe with you all.

397g/14oz extra lean minced beef
1 red pepper cut into bite size pieces
1 courgette cut into bite size pieces
4 garlic cloves finelycrushed
400g chopped tomatoes with herbs
397g/14oz passata with herbs and garlic
2 tsp mixed herbs
salt and freshy ground black pepper
511g fat free natural yoghurt
2 eggs lightly beaten
a pinch of nutmeg
low calorie cooking spray
12 dried lasagne sheets
4 level tbsp grated parmesan
a mixed salad to serve

1) place in a large non stick pan over a high heat, the minced beef, red pepper,courgettes, onion and garlic and stirfry for 6-8 minutes. add the tomatoes,passata and dried herbs, season well and cook for a further 12-15 minutes stirring often.
2) meanwhile mix together the yoghurt,nutmeg and eggs until smooth and season well.
3)preheat the oven to 200*c/gas6. spray a medium lasagne dish with frylight then spoon half the mince mixture into the base and top with half the lasagne sheets, spread over half of the yoghurt mixture onto the sheets and then repeat the process and top with the parmesan cheese.
4) bake in the oven for 20-25 minutes until the top is golden then serve with a large salad.
Trust me, you will love it, my OH and fussy kids ate it and went back for seconds, i had spicey wedges and salad with mine and i've got to say it's one of the best recipes i've tried of late, this will become a regular on the menu i think. hope you enjoy it as much as i did. ;)
On Extra easy this is 1 and a half syns per serving and this recipe serves 4 people.

Sorry to be a pain but does anyone know how many syns this would be on red? Could use the parmesan as HEXA so just the past sheets to syn I think?
 
Good to know, I'm going to give this a go at the weekend and it is for guests so...fingers crossed! I'm thinking of adding a bit of low fat mozzarella on top just because it is for guests, what does anyone reckon?

PS it is 12 syns on original/red days :eek:
 
I did indeed make it and it was good :) I did find though that it was a bit dry, so I would add more tomato passata stuff next time.
 
And I am making a S W lasagne tonight, but HEB ing the mince as on a green day!
 
Well when I did mine I used a tub of quark and mixed in 100mls of bisto cheese granules made up as directed. I then sprinkled grated heb cheese on top and it was quite cheesy but not like a sauce to be honest. It went more like cottage cheese, but it was more than acceptable. Put the rest in the freezer and we are having that tonight. So hungry now, may go and re heat in the micro right now! :)
