Minted Lamb Casserole

This is in the oven now and smells yummy!

In a casserole dish put in:
Diced Lamb
4 Carrots diced
1 Leek chopped
2 Celery stick diced

For the sauce:
500ml veg/lamb stock with 4 tsp gravy granules and 1 tbsp mint sauce.

Cook for 1 1/2!

Serve with extra veg if on a red day and add potatoes if doing E.E
