Carrot, pineapple and ginger salad

I wanted some more superfree to go with our curry meal tonight, so had a play around with what was in the cupboard and fridge and came up with this:

Carrot, pineapple and ginger salad. 2 syns total (for the ginger)

One/two large carrot(s) (up to you!)
Fresh pineapple (I used roughly the equivalent amount of two 'rings')
One piece stem ginger in syrup

Grate the carrot (you can blitz in a food processor, but I'd rather wash my orange hands than faff about and wash the food processor!)
Chop the pineapple into chunks - about 1 cm square
Drain the syrup from the piece of ginger and chop finely - about half the size of the pineapple pieces.

Mix together. That's it! It served two as a side salad. If you can make in advance and toss it every so often the tastes mingle together even better.

If I had had more time and I wanted totally syn free I would probably make a ginger syrup with some grated fresh or dried root ginger and some sweetener, but to be honest it was only one syn anyway and was very fresh and tasty!

Another time I might add some finely chopped fresh mint as well...
