Warming winter chicken cassarole

I have just made the best dinner ive ever eaten and was all free on EE days. Here is the receipe. let me know what you think??

Serves approx 4

4 chicken breasts cut into pieces
fry light spray
2 cloves garlic
rosemary
thyme
sage
1/2 butternut squash
4 carrots
2 onions
handfull of frozen peas
1 leek
handful pearl barley
5 new potatoes
worcester sauce
soya sauce
2 chicken stock cubes
1 veg stock cubes
4 -5 tbsp instant mash powder to thicken
salt & pepper to taste

Brown the meat with the herbs and garlic, throw all the vegetables and barley in a pot with some boiling water and stock cubes (enough to cover the meat and veg). Add a dash of worcester sauce & soya sauce and simmer until vegetables are cooked (around 30 mins) to thicken the sauce save your sins and add instant mash powder to thicken.

If you need to add salt and pepper do this before serving.

I made this tonight for dinner and it was a hit! I will definitely make this one again, great for cold winter nights! Even my 10 month old son LOVED it!! Thanks so much for sharing!! I highly recommend this recipe!! :p

oh im glad you liked it. I just threw everything in a pot for a quick meal & was rather tasty although my boyfriend moans everytime i put pearl barley in things as he doesnt like it but it just tell him tp shut up and eat it

LOL!! I really loved the pearl barley in it, even my OH said he enjoyed the barley too!! Next time your BF moans, just tell him to make his own dinner!!! ;) Thanks again!! :bighug:
 
This will be going on my menu for next week. I love Chicken Casseroles, but for some reason never make them and always end up with Beef. I love the idea of the pearl barley, I always add it to my soups. Thanks for suggestion!
