SW girl, wants to help WW mum!

I'm planning things to make for our family parties over christmas, I'm responsible for the majority of the vegi stuff as I was vegi for 13 years.

Thing is, I'm doing slimming world, I know what to do for me, but I'd really love to have some tasty buffet food for mum, but I know nothing about WW, all I know is she's doing this pro points thing and she's rubbish at explaining it to me!

Please can anyone help?
 
Well veg is free same as SW apart from peas/sweetcorn which again is same as SW. If you tell us what your planning we can point it for you. Then you will look like super daughter when you have all the points to hand & get extra pressies. Yay.

how about making some vegetable samosa ?

100g Potato -2pp
50g Petit Pois - 1pp
100g Butternut Squash - 0pp
1x Onion - 0pp
1x Carrot - 0pp
1 Tbsp Lemon Juice - 0pp
1/2 Tsp Cumin Powder - 0pp
1/2 Tsp Curry Powder -0pp
1 Tsp Garam Masala - 0pp
Frylight - 0pp
Filo Pastry - 1pp per sheet

Preheat oven to 200oc
Cut up Veg, put the Potato and Butternut Squash into a pan of boiling water and boil for 8 min, then add the Petit Pois and cook for a further 2 min.
Meanwhile Fry the Carrot and Onion in a frying pan using a few sprays of frylight... if it starts to stick to the pan add a splash of water. once cooked add the spices.
Put Everything in a mixing bowl and add the lemon juice.
Make into little parcels and put on a baking tray that has been lined and sprayed with frylight. once tray is full of samosa's spray with frylight and put in the oven for 25 min to cook.

you could make quite a few out of this mix, so approx 2pp each if you use a whole pastry sheet per samosa.

Its free so your spring rolls would only be 1PP each :) Have you tried Asda's frozen oriental veg mix? Had it for the first time this week and it was fab
 
ohh chinese spring rolls sound good :) ... why haven't i made them yet? .... think i know what i'm making next week now :)


i also thought while you have the filo, how about some mini veg quiches? eggs are 2pp each .... and if you did maybe peppers,onions and/or tomatoes in them they would be 0pp veg :)

142ml Skimmed milk is 1pp
or
142ml Semi Skimmed milk is 2pp



also how about a home-made tomato salsa / chutney ?
if you have the SW 100 saucy secrets book there is a fresh coconut chutney recipe which is 2pp for 1/4 on WW .... i tried SW last year so have a lot of SW books which i'm gradually converting into WW PP's :)

home-made chilli sauce

225ml Water - 0pp
2 level tsp Castor Sugar - 1pp
57ml White Wine Vinegar - 0pp
1 Chilli (de-seeded and sliced) - 0pp
1 level Tbsp Tomato Ketchup - 0pp

0pp for 1/4

Put water in a saucepan, bring to boil, add sugar, stir till dissolved

pour in vinegar, cook for 6-7 min until reduced and syrupy

stir in the chilli and ketchup, put in bowl and chill till needed !

ohh another thought !! ... how about some vegetable kebabs? .... courgette, mushrooms, cherry tomatoes, mixed peppers, onion ..... can mix and match them on different skewers or have a bit of everything on all of them. then just spray them with frylight and roast in the oven ... would be 0pp !.... maybe sprinkle some cajun spice or paprika or something on them for a bit of flavour before cooking.
