Green Days Are there any vegans on this site?

I'm not vegan but always love the food I am served by a really good vegan cook that I know. I think her food is very heavy on nuts and olive oil though so never low calorie. I would love to know of any recommended vegan recipes I could make sw friendly. This is one I make regulaly.

boil pasta shells in salted water
heat 1 tbs olive oil and fry lots of garlic and some chilli flakes
put brocoli in with the pasta for the last minute of cooking
drain pasta, broc and mix into garlic pan add olives, salt and pepper
my friend always adds peanuts at this stage. I tend to omit the nuts (but depends how many syns you want to use)

A very simple and flavoursome dish

Sorry not vegan but i'm veggie and always do green days. Been veggie for 9 years this is just making me eat a lot more veg, less cheese etc. I think you could do the SW plan without eggs...lots of recipes about!

Hope you don't mind me invading.. (not a vegan - in fact a real meat eater), but I do enjoy green days.

Favourite winter feel good food is baked beans, mashed potato and quorn chicken style nuggets!

I love the colmans or shwartz packet pasta mixes that are normally around 7 - 8 syns, but it does enough for 4 poeple. Again excuse my ignorance but these packets contain milk and or cheese whey but no eggs - so I don't know if they are suitable x
