I just tried a recipe from an old slimming recipe book and adapted it to make it free for SW extra easy. It is very tasty.
I had mine with free parsnip crisps
I think I might add cumin or chilli to my next batch
- finely chop a red onion
- fry in fry light to soften
- add 4 or 5 thinly sliced carrots
- add chopped garlic if you like it
- season well with salt and black pepper
- add half a pint of vegetable stock
- simmer slowly until the stock has reduced
- Add 3 tablespoons of quark or fromage frais (depends on the consistency you prefer)
- blend
