Honey and mustard glazed pork
4 Pork Loin Chops (fat removed)
1 tablespoon of honey (3 syns)
2 teaspoons of Dijon mustard (1)
1 teaspoon of cider vinegar
2 teaspoons of light soy sauce
3 large carrots, sliced into medium sized batons
2 large baking potatoes, cut into chunks (with skin)
Frylight/Pam Spray

Method
Preheat oven to 200c or 400f
Place carrots in an ovenproof dish, spray with some Frylight/Pam Spray
Parboil the baking potatoes in saucepan of boiling hot water for approx 7 mins
Place on a baking tray and spray over the top with Pam or Frylight, sprinkle with a little salt.
Place both the potatoes and carrots into the oven and roast for approx 45mins to 1 hour.
Take the potatoes out half way through cooking time and roughly mash down with a fork.
Place the pork loin chops in a dish.
In a small bowl mix together the honey, soy sauce, vinegar and mustard, pour ove the pork chops and turn the chops a couple of times in the dish to thorougly coat.
Spray a frying pan over a medium heat with some Frylight or Pam Spray. Add the pork chops and cook until golden on both sides and cooked through.
Serve with your Rustic Roasted Potatoes and Carrots.
