Why dry pasta instead of fresh

I only joined yesterday and am trying to get to grips with the (at the moment) complicated lists. I see that dried pasta is ok but why is that better than fresh?

Apparently it's something to do with the oils they put on to keep it fresh, it really confused me too as I love fresh pasta.

If i make my own fresh pasta at home, which doesn't have any oils at all added, is just flour and egg, does this count as free, as this is all dried pasta is? I normally make lots of fresh pasta, and want to be able to continue!
 
I asked my consultant about thus and she said if your making from scratch you have to sun each item individually...
This seems a bit crazy to me but being new I didn't want to argue about it, I think if your just using the same basics that would go into dried pasta (flour, egg, water) then it should be free, or maybe allow a couple of syns just to be on the safe side?
