Ideas for damage limitation

My brother is coming for tea tonight and i want it to be special for him because he is going through a tough time; M is older than me but has a learning disability and suffers from depression, long story -please bear with me- he lives with my mum (who also suffers mental health probs) who isn't around a lot at the mo because she has a new bf :rolleyes: :sigh: so M is staying in the house on his own a lot (he is safe as me and DH keep an eye and he lives a few doors away from my grandparents). But he's been really low recently so I said why not come for tea, I'll cook absolutely anything you want...

So he has asked that we all have Toad-in-the-hole and mash, and chocolate cake for pud :rolleyes: which tugged at my heart strings because we would have had that as a saturday night dinner as kids. and besides which, are both things I love!

Just wondered if anyone had any tips for 'damage limitation' as I can't cook something else now I have promised him this?

You can make it special for your brother and keep it SW friendly. I made a tole in the hole last night using the recipe for 1 syn yorkshires and tesco light choices sausages at 1 syn each.

For chocolate cake I've made the squidgy choc cake recipe from the slimmingeats website which is yummy, to make it fudgy maybe add some golden syrup?

I agree with the previous post, the 1 syn yorkies recipe is great. I havent used it for making TITH but for individual yorkies, its great. There is also a recipe for syn free onion gravy on the slimming eats site too. You can load your plate with free veg and also some yummy potatoes roasted in fry light. I would also add some pickles or beetroot (only cos I love them!). :drool:

Can't really help with the desert as I dont like cake really but there are some lovely recipes and ideas on here. I'll have a hunt round and see if I can find anything.

You could also mix some ff fromage frais or something like that into your mash to make it nice and creamy, or maybe some sprays of the frylight buttery will make the mash buttery?

6 eggs
1 oz self raising flour
1 oz cocoa powder
9 tablespoons splenda
2 teaspoons orange essence

Filling/Topping:
1 tub quark
Tin of mandarin segments in juice
2 teaspoons orange essence
6 Tablespoons splenda


Whisk egg whites until stiff and in a separtae bowl whisk egg yolks with either the orange essence and splenda, add a 1/4 of the egg white & beat until pale yellow.

Add the flour and coco powder gradually & fold into the mix carefully, when done add the rest of the egg whites & fold in.

Pour into 2 sandwich tins and even out with a spoon. Place in the oven on 190 for about 15 minutes and check regulaly. Once done the cakes should be springy if you press your finger in the middle.

Take out of the oven, leave to cool, and carefully remove from the sandwich tins.

Filling/topping:
Beat the quark with the orange essence and sweetener, spread 3/4 on the bottom layer of the cake and arrange the mandarin segments. Put the top of the cake on & use the rest of the filling to top and add the
mandarins as required.

Might be worth a try?
