my mum is type 1 insulin dependent and takes at least 120mg of insulin a day. I have mentioned LC to her before and her attitude would be 'a dinner with no spuds??'

I'd love us to LC together but she would be worried about low BG as she flies into a panic and stuffs chocolate and cereal into her if it drops lower than 4.
Just wanna know if any insulin dependants on LC get very low bg and how they cope with them without having too many carbs?
