Veg Pakora??

Hi
I read a recipe somewhere for Veg Pakoras. They were made with potatoes,mixed frozen veg and curry powder.

Anyone habe any idea what recipe I mean or where I might get it??

Am almost sure it was a SW recipe but can't find it on this site.

Hi,

I found this, never tried it but sounds lush.

ingredients

  • 2 large white potatoes, cooked and mashed to a firm consistency with no butter or milk
  • 1 red onion, diced
  • ½ large bag of frozen chopped vegetable mix (sweetcorn, broccoli, carrot, cauliflower)
  • 2 tbsp curry powder (use mild, medium or hot to suit your own taste)
  • 3-4 tbsp fat free yogurt
  • 1 egg, beaten
  • Fry Light

Method

1. Pre heat the oven to 200°C/Gas 6. Place the mashed potato, diced onion and defrosted vegetables into a bowl and combine thoroughly.

2. Stir the curry powder into the yogurt and add this to the vegetable mix and stir thoroughly.
3. Beat the egg and add it to the mixture, stirring constantly. The mix should still be quite firm, but if its too runny add more vegetables.
4. Line a baking tray/wire rack with baking paper to prevent to pakoras from sticking, and spoon the mixture onto the tray in tablespoon sized 'dollops'.
5. Spray with Fry Light and bake for approximately 30-40 minutes - or until firm on the outside and golden brown. 7. Allow to cool slightly so that the pakoras firm up.
 
Someone mentioned these at class on Tuesday night, and they sound gorgeous!! They'd be great as a snack food for on a saturday night in front of the TV, mmm :drool:

Someone made these and brought them in to the taste-in we had in meeting last week....nom nom nom! ;)
 
Here is my version of these using Instant Mash!...............


Pete’s Pukka Pakoras


Ingredients

1 Red Onion, finely chopped
1 Egg
125g Instant Mash
½ cup frozen peas
1tsp turmeric
1tsp chilli powder
1tsp garam masala
1tsp cumin
1tsp hot curry powder

Method

Pre heat the oven to 200°C/Gas 6.
Tip 125g of Instant Mash into a mixing bowl, add the spices, egg & mix together, season with salt & pepper, add hot water and mix to a slightly loose mix.
Stand for 2 mins add more water if now too stiff.

Line a baking tray/wire rack with baking paper to prevent sticking, using two tablespoons form” small scone” size amounts and place on the tray.

Spray with Fry Light and bake for approximately 10 mins, remove from the oven, reduce the heat to 180c, turn them over.

Spray again with Fry Light and return to the oven for a further 20 mins, remove & leave on a wire rack, allow to cool.

Allow to cool slightly so that the pakoras firm up.


Will test them on the Community Centre Staff this morning
