hi all, can i ask how you ladies all roast ur vegetables? am trying to eat different foods and vegetables roasted in oven taste great but i dont like using the cal sprays? any ideas on how to save calories.

I just roast without or use a 1cal spray but I don't think it makes that much of a difference so don't always bother. What really does make a diff is using chopped herbs, lots of them tossed in the veggies
 
so if i just roast with salt and peper and mixed herbs its ok? also what veg do uz use ,i use mushrooms and pepers and parsnips,i count the raw weight and just roast,,is it stil the same calories after i have roasted them? thanks

I do raw and count those calories even when cooked.

Mushrooms I love but I do find shrink tons

My favvy veg is butternut squash. I also like aubergine and courgette.

Salt pepper and herbs for me is fine. You could also roast some garlic with it too if you like arlic. It comes out all squishy and yum
 
i roast my veggies in the actifry and they come out great without any kind of oil or spray....

if you dont have an actifry i would advise you to use a good non stick tray or a glass roasting dish to avoid everything gluing itself down during cooking!

another handy tip is to par-boil the firmer veggies before roasting...for example carrots, spuds, parsnip etc.....i find that if i dont do that, they can sometimes stay way too crunchy on the inside and burned on the outside!

my favourite veggies for roasting are....courgettes, peppers, red onions and asparagus.
