I need help with cooking a gammon shank asap please

ok trying a recipe for bacon lentil duff - my problem is because of the shank it needs to cook for 2-3hours. Been cooking for about 1hr 15mins & i don't have a non-stick pan big enough so its starting to burn:(

Any idea's what i can do to cook the shank??

Was thinking maybe cooking that on its own & then adding it back once cooked???
