BUTTERNUT SQUASH SOUP/SAUCE

last diet.......EVER!!
I've made this soup for many years & it's lovely comfort food & very easy to make.
You'll need:

1 Butternut squash
1. small carrot
1. medium size onion
garlic cloves (optional)
nutmeg, cumin & lashings of blackpeper.

Method:
Cut all the veggies into small pieces, pop everything into a pan with water just covering them, bring to the boil then simmer for about 20 - 25 mins. when all the veggies are soft, either put in into either a liquidiser or use a hand blender so it becomes a lovely thick soup, no lumps!

I'll be taking this to work tomorrow, & then in the evening I'll use whats left as a bed to pop my cod fillet on. Mmmmmm
 
Oooh thanks Dgirl, I'll try that as I have loads of them in my greenhouse.......except they seem more like chillies than peppers.Now I know it said peppers on the seed packet when I planted them......but boy are they hot!!:sigh:
