so I have some curly kale and I'm thinking what I can do with it other than having it with a roast ect has anyone got any recipes ?

I've had it with curry before - I like this recipe: Indian Spiced Greens. Just do it in Fry Light (with or without the coconut).

I mixed mine with mashed potato and chopped red onion and combined it all with a beaten egg and seasoning then used a large cookie cutter as a mould and made potato and kale cake out of them then baked then in the oven untill crispy and brown

They also froze really well and I found them brilliant as a lunch with a bit of fresh chopped tomato salad or fresh tomato salsa.

I just cooked them from frozen.

Mmm thats sounds yum, might have a go at that, chuck a few spices/chillies in maybe.

I never thought of cookie cutters! What a good idea, I make a right arse of myself trying to make burger shaped things, how dense am I...
