I found this recipe on the BBC Good Food website and altered it slightly!


Makes 4 servings - 5pp a serving


4 chicken breasts (620g) - 15pp
2 cans chopped tomato with basil - 0pp
Garlic - 0pp
Knorr Chicken Stock Cube - 1pp
6 rashers back bacon (I used smoked bacon) - fat removed - 5pp
200g baby button mushrooms
1 medium onion - 0pp
1 tablespoon tomato puree - 0pp
Worcestershire Sauce - 0pp
Mixed Herbs
(Any spices or herbs that you want)


1. Dice the onion, slice the mushrooms, slice up the bacon into pieces - cook until onions have softened, bacon cooked and mushrooms have sweated a little.

2. In another pan over a low heat, empty the chopped tomatoes, add the worcestershire sauce, herbs, garlic, tomato puree, spices - if you're adding them and the stock cube. I added half a can of boiled water as well.

3. Add the onions, mushroom, bacon to the chopped tomatoes.

4. In the empty pan, brown off the chicken and ensure it's cooked all the way through.

5. Add to the tomato mix and cook on a medium heat (simmering) for 10-15 minutes.

Serve with rice or mashed potato.

I served mine with 30g of smash original - 3pp. Totally yummy and we have some for lunch tomorrow :D
