Butternut squash and red pepper soup

Tried the soup the other night. It was tasty with two slices of crusty bread. My husband and eldest son werent overly fused. But youngest loved it too. Going to try carrot and coriander soon. Attempting to make sausage and onion meat loaf tonight. Seen recipe on here.

2 butternut squash deseeded and chopped up.
1 red pepper deseeded and chopped up.
I did 5 carrots sliced
2 knorr chicken stock pots and 2 and half pints of boiled water.
Put it all in pot and just let it simmer til softened then blended.
Add salt or pepper if needed.

It made enough for the 4 of us and some 4 lunch the next day.

I make a similar soup but add curry powder and chilli - the spicy kick really transforms it and helps if you're getting bored of veggies. ;)

Good luck with the meatloaf - had that last week and it was delicious. Make sure to use lots of sage - tastes just like Christmas stuffing!
