Buttermilk...

Got to do it this time!!
....I asked the question on the Dukan site -

Question:
Hi - can you tell me if buttermilk is allowed on Cruise? The one you get in the shops here is nearly fat free and has no added sugar.

Thanks for asking and from their answer is would appear that they don't actually understand what buttermilk is (these days it's cultured like yoghurt)... they may be thinking Jersey Cow gold-top!

HOWEVER, they're still right: whilst low in fat, it's quite high in sugar (lactose) so that might well make it unsuitable (9g /100ml). So I go back to my earlier suggestion that for cooking and baking you could substitute yoghurt diluted with skimmed milk to make it pouring consistency or to use skimmed milk soured with a teaspoon of lemon juice.

Not all buttermilk is high in lactose. Losely Farm (a widely available brand) do a buttermilk that is lower in carbs and higher in protein than skimmed milk and the fat content is only 0.3%.
For the life of me I cannot understand why that would be a no-no.

Fat free milk 41kcal, protein 3.8g, carb 5.7g, fat 0.3g

Buttermilk 33kcal, protein 3.3g, carb 5g, fat 0.1g
Ingredients: skimmed milk and lactic cultures
 
Well, do use your own judgement. the Sainsbury buttermilk I looked up last night is 0.2g fat and 9.7g carbs (and really it is like yoghurt, not at all like the buttermilk I am used to from Germany). I guess as it's so variable (like the yoghurts are) they can't say anything but 'No' and you'll just have to decide for yourselves.
 
I think its one of the cases where common sense has to prevail - if the fat and carb figures are within the limits, go for it!
