Homemade beef stew

Am at my mom's and don't have my folder with me to work this out. My mom's making beef casserole tomorrow,using 1lb of stewing steak with fat trimmed,potatoes,veg and oxtail soup (the powdered one). I'll be eating a quarter of it,but will only have 1 potato. anyone have q clue how to point it?
