eating a gorgeous low carb pizza!!! mmmm and have dessert lined up

just made a fab low carb pizza, ive made it a few times but im gettin better at it. Ive gone over my cheese ration but last time i did this diet i ate loads of cheese every day n still lost loads. it seems a bit harder being a veggie to avoid it

also made no carb jelly, from mixed berry tea bags believe it or not!! or i have ricotta rice puddin made up and ready to cook. i actually think i love this diet lol
 
pizza.....this totals about 15 carbs ive worked out, but its a big pizza size of a large baking tray so ive halved it for tomorrow

250g of cauliflower
350 ish g of mozerella
100g cheddar
enough passata to cover base but sparingly
any other toppings ( though in carb count above ive only factored in mushrooms )
2 eggs

rice the cauliflower usin a grater into a bowl, cover in cling film n microwave for about 3 mins

then add to 300g mozerella and two eggs, mix together then spread out on grease proof paper on a bakin tray. put in the over until it starts to solidify and brown

then get it out, flip it over onto another bit of grease proof and do the other side. when that begins to brown, put passata and toppings on and cook until tooppings are cooked n cheese melted.

its a fairly soft base, not managed to get it solild yet but its lovely

jelly

6 mixed fruit tea bags, can be any flavour without added sugar and caffeine free
570ml water
sweetener to taste
geletine packet

put 6 tea bags in 570ml boilin water, leave to cool. squeeze teabags out n disgard. sweeten to taste.
whisk in geletine then bring to boilin point for 2 mins. then pour into bowl and leave to set in fridge.
serve with cream if you want just remember to count the carbs. the jelly contains trace carbs. its a little odd cos you can taste the tea in it but its edible for a sweet fix

ricotta rice puddin

250g ricotta cheese
125ml soya cream
sweetener
vanilla extract, ground cinnamon or lemon rind
2 eggs

mix everythin together until creamy, heat gently stirring constantly for 4-5 mins or until eggs cook. it kinda goes a scrambled egg consistency. i put vanilla extract in and lemon rind. this makes 4 servings, 3 carbs each

I don't know if maybe it's because I haven't eaten anything for four days now, but that pizza sounds delish! I've always had quite a strange set of taste buds though so it's probably just me. Either way, am going to nab that recipe for later on when I'm actually allowed to start putting real food back into my diet.

Watch the amount of passata as tomatoes are fairly high in carbs. Also watch fruit and berry teas. I don't seem to have a problem with them but they do knock some out of ketosis and/or cause cravings.

I am vegetarian too so I fully understand about the cheese but as it is notorious for causing slowed losses and even stalls you may need to watch it. I have to limit it severly, alas. And I LOVE cheese!

that is why i put use the passata sparingly, i dont even use a tablespoon on one portion.
Also the fruit tea i have is caffeine and sugar free, and recommended in my book so its ok, though the jelly is actually nasty so i wont be botherin with that again lol

i made ricotta rice puddin instead which was actually really really nice. Ive got chocolate muffins for tonights dessert, and when i get past 2 weeks and into phase 2 im gunna make low carb tiramisu!! i love tiramisu!!! its only 5g a slice though, so not sure if i can or cant have it in phase one if i dont go over 20g carbs a day? this tiramisu recipe isnt in the diet book im followin, its been sent to me so not sure what phase it should be for
 
also, this diet says i can eat nuts in phase one but yet atkins says i cant, does anyone know why atkins says no to nuts?
 
They can Be a craving trigger - so atkins puts them in owl phase instead - thats when you are looking for your own triggers and so doesnt sabotage induction.
