Does any one have an amazing salad recipe for a work lunch?

I love salads but am running out of ideas!

I've had so far
- ham and coleslaw
- coronation chicken
- tuna and feta

I'm not fussy except I don't like beans/pesto/tomatoes!

Chicken caesar? Sliced up cold chicken breast, grated cheese and Salad Light's caesar dressing *want one right now actually*

Bacon and egg salad ? hard boiled egg and cold cripsy bacon-really yummy
Or how about greek salad with feta and olives ?

I like lots of grated carrot and apple and beetroot with my salad and if you have points to use some crushed walnuts with some extra light Mayo too!

All sound amazing! Especially that last one! I have just found an amazing recipe for a watermelon and feta salad with limey onions and chicken! Mmm! Will be referring back to this thread for the future!
