OMG!!!!!!

I just made the muffins - they are fabulous!!!!! And so quick to make - just one thing - I must remember to take them out of the tin to cool as they went a bit soggy on the bottom - no-one like a soggy bottom!!! I had 2 with a cuppa after my onion soup for lunch and was pretty stuffed! Now that I can have something delish with a cuppa things just got even easier!!

Does anyone know if they will keep for a couple of days - thinking whether they would be ok to take camping next week?

Not sure how well they would keep - they were moist though so maybe they would be OK if you wrapped them in cling film once they were totally cold. I've just ordered some sugar free syrups to flavour them with from Welcome to Sugar Free Megastore | Sugar Free Megastore - I'll let you know what they are like!

Yum, they sound delicious! Haven't attempted muffins yet but really must.

I made some and they were still fine after 3 days. The could have perhaps been ok for longer but they didn't last that long.
