mung beans

Check out the "Syn Free Wrap" thread a bit further down the board

There are a couple of wraps available in the US/Canada only that can be used as 1 HEb, these are the really high in fibre wholegrain ones, only a couple of brands - La Tortila Factory and Flatouts.

You can't use any wrap as a HEb and certainly not white varieties which are high in fat and low in fibre.

yes 2oz of pumpernickel bread is a HEb in the US/Canada, but remember you only get 1 Healthy Extra A and 1 Healthy Extra B on the Extra Easy plan.

Here are my attempts!....

Pete’s Mung Bean Wraps

Ingredients

200g/Cup of Mung/Moong Beans
Makes about 8 wraps
Salt
Method

Soak the beans in cold water for between 12 -24 hrs. Depending whether they are split beans or whole, changing the water at regular intervals, removing any hardened beans.
When ready grind them using a food processer and a small amount of water, adding salt, until you have a mixture similar to a pancake mix but slightly thicker.
Heat a frying pan sprayed with Fry Light until its hot then ladle the mix and smooth out using the base of the ladle to form a thin coating, cook for 3-4 mins and flip over and cook until the other side is done. Use for wraps while still slightly warm to ensure easy folding.

Surely you'd need to syn these as you are using a free food as a flour substitute? Using the same logic as synning couscous cakes??

This was discussed on another thread and the consensus was that because you use the mung bean wraps as part of a meal it is not food abuse, but i imagine a bit of portion control would be needed - in that eating 8 because they are free would be illadvised!!

Sorry, I wasn't aware there was another thread. I thought that using a free food as a flour substitute was food abuse tho! My bad! :)

I have just made up my 2nd batch & honestly its no hassle at all. I litterally soack a cup full of beans in cold water that I change each day (2min job) then after 2 days of soaking (2 as I bought 5kg - yes 5kg of the things!!!! & there whole beans) I just drain & blitz with my hand blender.

I think they are really really nice :)

Just to let you all know that I got an answer re the syn value for these (I sent the full recipe to slimming world for an official answer) because the mung beans are blended and used to make a wrap (therefore are a substitute for flour) they do indeed need to he synned. 3.5 syns per 28g of dried mung beans. You need about 100g of dried beans for 4 wraps, so 4 syns per wrap.
